Poml\u00e1zka, kraslice a povinn\u00e9 n\u00e1v\u0161t\u011bvy p\u0159\u00edbuzn\u00fdch. Takov\u00fd obraz Velikonoc m\u00e1me ulo\u017een\u00fd hluboko v pam\u011bti. Jen\u017ee realita se za\u010d\u00edn\u00e1 m\u011bnit. St\u00e1le v\u00edce lid\u00ed si tyto sv\u00e1tky upravuje podle sebe, n\u011bkdy nen\u00e1padn\u011b, jindy \u00fapln\u011b radik\u00e1ln\u011b.<\/h6>\n<p>Tradice nezmizely, ale p\u0159estaly b\u00fdt samoz\u0159ejmost\u00ed. Pro n\u011bkoho z\u016fst\u00e1vaj\u00ed pevn\u011b spojen\u00e9 s tradic\u00ed, jin\u00fd si z nich vyb\u00edr\u00e1 jen to, co mu d\u00e1v\u00e1 smysl, a dal\u0161\u00ed je slav\u00ed \u00fapln\u011b jinak. Mo\u017en\u00e1 se zd\u00e1, \u017ee Velikonoce ztr\u00e1cej\u00ed svou p\u016fvodn\u00ed tv\u00e1\u0159. Ve skute\u010dnosti ale sp\u00ed\u0161 odr\u00e1\u017eej\u00ed prom\u011bnu spole\u010dnosti.<\/p>\n<p>Ka\u017ed\u00e9 velikono\u010dn\u00ed j\u00eddlo na na\u0161em stole nese hlub\u0161\u00ed v\u00fdznam \u2013 nen\u00ed jen o chuti, ale tak\u00e9 o tis\u00edcilet\u00fdch tradic\u00edch, k\u0159es\u0165ansk\u00e9 symbolice a oslav\u011b probouzej\u00edc\u00ed se p\u0159\u00edrody. Ber\u00e1nek p\u0159ipom\u00edn\u00e1 ob\u011b\u0165, vejce nov\u00fd \u017eivot, sladk\u00fd mazanec tvar slunce a bylinkov\u00e1 n\u00e1divka o\u010distu po dlouh\u00e9 zim\u011b. Tyto pokrmy nejsou n\u00e1hodn\u00e9 \u2013 jejich ko\u0159eny sahaj\u00ed a\u017e do pohansk\u00fdch ritu\u00e1l\u016f, \u017eidovsk\u00fdch tradic i st\u0159edov\u011bk\u00fdch k\u0159es\u0165ansk\u00fdch zvyklost\u00ed.<\/p>\n<p>Je to ide\u00e1ln\u00ed \u010das vyu\u017e\u00edt p\u0159i va\u0159en\u00ed prvn\u00ed jarn\u00ed zeleninu a bylinky, pochutnat si na jemn\u00e9m masu, nebo up\u00e9ct sv\u00e1te\u010dn\u00ed n\u00e1divku. Je \u0161\u0165avnat\u00e1, pln\u00e1 bylin, m\u00e1sla a vaj\u00ed\u010dek a tradi\u010dn\u011b se pe\u010de na Bo\u017e\u00ed hod velikono\u010dn\u00ed. Sekanina, hlavi\u010dka, n\u00e1divka, sv\u00edtek \u010di zlat\u00e1 buchta; v\u0161echna tato ozna\u010den\u00ed pat\u0159\u00ed jednomu jedin\u00e9mu j\u00eddlu. N\u00e1divka je tradi\u010dn\u00edm velikono\u010dn\u00edm pokrmem, kter\u00fd se p\u0159ipravuje na B\u00edlou sobotu. A bylo by hodn\u011b nespravedliv\u00e9 pova\u017eovat ji jen za v\u00fdpl\u0148, kter\u00e1 se d\u00e1v\u00e1 zpravidla do masa. Je toti\u017e i vynikaj\u00edc\u00edm samostatn\u00fdm j\u00eddlem, nav\u00edc je dobr\u00e1 tepl\u00e1 i za studena.<\/p>\n<p>Hlavi\u010dka je lidov\u00fd n\u00e1zev pro velikono\u010dn\u00ed n\u00e1divku, sv\u00edtek, sekanici, nebo sekanou. N\u00e1zev vznikl podle masa v n\u00e1divce, kter\u00e9 \u010dasto poch\u00e1zelo z hlavy telete. Jedn\u00e1 se o tradi\u010dn\u00ed velikono\u010dn\u00ed pokrm, kter\u00fd obsahuje kop\u0159ivy a dal\u0161\u00ed byliny. V d\u0159\u00edv\u011bj\u0161\u00edch dob\u00e1ch se p\u0159ipravovala bez pe\u010diva, z\u00e1klad tvo\u0159ilo sv\u00e1\u0159en\u00e9 ml\u00e9ko s krupic\u00ed.<\/p>\n<p>Dovol\u00edm si vr\u00e1tit se do historie. Ji\u017e v kucha\u0159ce Sever\u00edna mlad\u0161\u00edho z po\u010d\u00e1tku 16. stolet\u00ed najdeme telec\u00ed hrud\u00ed nad\u00edvan\u00e9 sm\u011bs\u00ed vajec, rozinek a mandl\u00ed bohat\u011b ko\u0159en\u011bn\u00e9, dr\u016fbe\u017e nad\u00edvanou hru\u0161kami \u010di jablky. Alchymista Bavor Rodovsk\u00fd ve sv\u00e9 \u201ekuchmistrovsk\u00e9\u201c knize z roku 1591 vedle dr\u016fbe\u017ee nab\u00edz\u00ed i recept na pln\u011bn\u00e9 k\u0159epelky. Cesta n\u00e1divky jako specifick\u00e9ho gastronomick\u00e9ho druhu zapo\u010dala v 16. stolet\u00ed na kr\u00e1lovsk\u00fdch<br \/>\nstolech tudorovsk\u00e9 Anglie.<\/p>\n<p>M\u00f3da a chu\u0165 nad\u00edv\u00e1n\u00ed nadchla brzy i kr\u00e1lovsk\u00fd dv\u016fr Francie a stala se vrcholem luxusu i prezentace. Historie n\u00e1m zaznamenala p\u0159\u00edklady n\u00e1divek, kdy ze serv\u00edrovan\u00e9 labut\u011b napln\u011bn\u00e9 holubem vyl\u00e9tl nakonec \u017eiv\u00fd slav\u00edk. Ale tahle pod\u00edvan\u00e1 c\u00edsa\u0159sk\u00fdch, kr\u00e1lovsk\u00fdch \u010di carsk\u00fdch dvor\u016f m\u00e1 v na\u0161ich zem\u00edch podobu daleko v\u011bcn\u011bj\u0161\u00ed, vych\u00e1zej\u00edc\u00ed z tradic kuchyn\u011b bavorsk\u00e9 a jihon\u011bmeck\u00e9.<\/p>\n<p>N\u00e1divka sest\u00e1v\u00e1 ze sm\u011bsi sekan\u00e9ho nebo uzen\u00e9ho masa s vejci, krupic\u00ed, nebo houskami namo\u010den\u00fdmi v ml\u00e9ce, \u010derstv\u00fdmi zelen\u00fdmi bylinami a ko\u0159en\u00edm. Marie-Jank\u016f Santnerov\u00e1 ve sv\u00e9 Knize rozpo\u010dt\u016f a kucha\u0159sk\u00fdch p\u0159edpis\u016f z roku 1936 uv\u00e1d\u00ed recept na velikono\u010dn\u00ed n\u00e1divku, do n\u00ed\u017e pat\u0159\u00ed cel\u00e1 vejce, ml\u00e9ko, rozsekan\u00e9 maso, trochu soli, tlu\u010den\u00e9ho pep\u0159e a nov\u00e9ho ko\u0159en\u00ed a tolik strouhan\u00e9 housky, a\u017e je sm\u011bs zahoustl\u00e1. M\u00edsto uzen\u00e9ho masa, jak p\u00ed\u0161e Sandtnerov\u00e1, d\u00e1 se p\u0159idati va\u0159en\u00fd k\u016fzle\u010d\u00ed nebo jehn\u011b\u010d\u00ed ko\u0159\u00ednek. Takovou sm\u011bs doporu\u010duje kucha\u0159ka d\u00e1t do m\u00e1slem vymazan\u00e9ho pek\u00e1\u010de a p\u00e9ct p\u016fl a\u017e t\u0159i \u010dtvrt\u011b hodiny. V receptu sice bylinky neuv\u00e1d\u00ed, ale jejich pou\u017eit\u00ed n\u00e1divku skv\u011ble ochut\u00ed.<\/p>\n<p>Obliba jarn\u00edho pokrmu dala vzniknout bezpo\u010dtu variant recept\u016f. Mnohde se n\u00e1divka stala ned\u011bln\u00edm j\u00eddlem v ka\u017ed\u00e9 ro\u010dn\u00ed dob\u011b. N\u011bkdo jedine\u010dnou chu\u0165 vytv\u00e1\u0159\u00ed sm\u011bs\u00ed masa, jin\u00fd m\u00e1\u010den\u00edm pe\u010diva ve v\u00fdvaru, mu\u0161k\u00e1tov\u00fdm kv\u011btem nebo s kombinac\u00ed bylin. D\u00edky kontryhelu, popenci, pampeli\u0161k\u00e1m, kop\u0159iv\u00e1m, pa\u017eitce a dal\u0161\u00edm bylink\u00e1m chutn\u00e1 jarn\u00ed n\u00e1divka nejv\u00edc ze v\u0161ech. V lidov\u00fdch tradic\u00edch tento pokrm symbolizuje nov\u00fd \u017eivot i nad\u011bji na dobr\u00fd \u00farodn\u00fd rok podobn\u011b jako cel\u00e9 Velikonoce. Ostatn\u011b do velikono\u010dn\u00edch n\u00e1divek se d\u0159\u00edv<br \/>\nb\u011b\u017en\u011b p\u0159id\u00e1valo jehn\u011b\u010d\u00ed, k\u016fzle\u010d\u00ed nebo telec\u00ed maso. Mlad\u00e9 byliny m\u011bly podle lidov\u00fdch tradic o\u010distnou a posiluj\u00edc\u00ed moc. Kop\u0159iva byla cen\u011bn\u00e1 pro sv\u00e9 \u00fa\u010dinky na krev a celkov\u00e9 povzbuzen\u00ed organismu.
