Prosincov\u00fd test spot\u0159ebitelsk\u00e9 organizace dTest v\u0161ak uk\u00e1zal, \u017ee poctiv\u00e1 klob\u00e1sa je v\u00a0obchodech sp\u00ed\u0161e v\u00fdjimkou. Laboratorn\u00ed anal\u00fdzy osmi celorepublikov\u011b dostupn\u00fdch v\u00fdrobk\u016f odhalily z\u00e1sadn\u00ed rozd\u00edly nejen v kvalit\u011b, ale i v pravdivosti informac\u00ed na etiket\u00e1ch, kdy t\u00e9m\u011b\u0159 polovina v\u00fdrobk\u016f skon\u010dila kv\u016fli v\u00e1\u017en\u00fdm pochyben\u00edm s\u00a0nedostate\u010dnou zn\u00e1mkou.<\/h4>\n<h6><strong>Klamav\u00e9 etikety a m\u00e1lo masa<\/strong><\/h6>\n<p><em><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-131630 alignright\" src=\"https:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2018\/05\/29\/logo-dtest-114x300.jpg\" alt=\"\" width=\"114\" height=\"300\" srcset=\"https:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2018\/05\/29\/logo-dtest-114x300.jpg 114w, https:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2018\/05\/29\/logo-dtest.jpg 126w\" sizes=\"(max-width: 114px) 100vw, 114px\" \/>\u201e<\/em><em>Nejv\u011bt\u0161\u00edm probl\u00e9mem leto\u0161n\u00edho testu bylo uv\u00e1d\u011bn\u00ed nepravdiv\u00fdch \u00fadaj\u016f o mno\u017estv\u00ed masa. T\u0159i v\u00fdrobky \u2013 vinn\u00e1 klob\u00e1sa z Globusu a oba testovan\u00e9 druhy z Makra \u2013 deklarovaly na obalu v\u00fdrazn\u011b vy\u0161\u0161\u00ed pod\u00edl masa, ne\u017e uk\u00e1zala anal\u00fdza,\u201c<\/em>\u00a0\u0159\u00edk\u00e1 Hana Hoffmannov\u00e1, \u0161\u00e9fredaktorka \u010dasopisu dTest. Globus uv\u00e1d\u011bl 75 %, skute\u010dnost v\u0161ak byla jen 61 %. U obou v\u00fdrobk\u016f Makro se nam\u00edsto slibovan\u00fdch 63 % masa na\u0161lo nejv\u00fd\u0161e 45 %. V\u0161echny t\u0159i klob\u00e1sy si za klamavou deklaraci odnesly nedostate\u010dn\u00e9 zn\u00e1mky, kter\u00e9 z\u00e1sadn\u011b sn\u00ed\u017eily i jejich celkov\u00e9 hodnocen\u00ed. P\u0159ekvapiv\u00fd rozpor mezi deklarovan\u00fdm obsahem masa a zm\u011b\u0159enou hodnotou pak p\u0159edvedly je\u0161t\u011b dal\u0161\u00ed t\u0159i zna\u010dky.\u00a0<em>\u201e<\/em><em>Ov\u0161em v\u00a0tomto p\u0159\u00edpad\u011b obsahovaly o dost v\u00edce masa, ne\u017e se p\u0159edpokl\u00e1dalo. Rozd\u00edl, kter\u00fd je ve prosp\u011bch spot\u0159ebitele, nen\u00ed klam\u00e1n\u00edm,\u201c<\/em>\u00a0vysv\u011btluje Hoffmannov\u00e1.<\/p>\n<p>Velk\u00e9 rozd\u00edly panovaly i mezi skute\u010dn\u00fdm obsahem masa v jednotliv\u00fdch v\u00fdrobc\u00edch. Hodnoty se pohybovaly od pouh\u00fdch 41 % a\u017e po 76 %. Sou\u010dasn\u00e1 vyhl\u00e1\u0161ka se obsahem masa ve vinn\u00e9 klob\u00e1se nezab\u00fdv\u00e1, historick\u00e9 normy p\u0159itom po\u010d\u00edtaly p\u0159ibli\u017en\u011b se 70 % masa. P\u011bt v\u00fdrobk\u016f se nad hranici 60 % dostalo, dva z nich dos\u00e1hly velmi dobr\u00e9ho v\u00fdsledku 76 %.<\/p>\n<h6><strong>Probl\u00e9my s tu\u010dnost\u00ed a sol\u00ed<\/strong><\/h6>\n<p>Laborato\u0159 odhalila i dal\u0161\u00ed nep\u0159esnosti v nutri\u010dn\u00edch tabulk\u00e1ch. Lah\u016fdkov\u00e1 vinn\u00e1 klob\u00e1sa Lidl\/\u0160\u0165avnat\u00e9 vep\u0159ov\u00e9 a hov\u011bz\u00ed obsahovala o t\u0159etinu v\u00edce tuku, ne\u017e v\u00fdrobce uv\u00e1d\u011bl, a to 29 % m\u00edsto deklarovan\u00fdch 22 %. Odchylka p\u0159ekro\u010dila povolen\u00fd limit, a v\u00fdrobek si i proto vyslou\u017eil celkovou nedostate\u010dnou zn\u00e1mku. Tu\u010dnost testovan\u00fdch klob\u00e1s se obecn\u011b velmi li\u0161ila \u2013 od 18 % a\u017e po 36 %.<\/p>\n<p>U soli se podobn\u00fd probl\u00e9m objevil u klob\u00e1sy Kaufland\/K-Mist\u0159i od fochu z Modletic. Laborato\u0159 zm\u011b\u0159ila 2,3 % soli, a\u010dkoli etiketa uv\u00e1d\u011bla pouze 1,8 %.\u00a0<em>\u201e<\/em><em>Rozd\u00edl op\u011bt p\u0159es\u00e1hl povolenou toleranci, tak\u017ee i zde padla nedostate\u010dn\u00e1 zn\u00e1mka za klamavou deklaraci,\u201c<\/em>\u00a0objas\u0148uje \u0161\u00e9fredaktorka Hoffmannov\u00e1.<\/p>\n<h6><strong>Chu\u0165? Jedna klob\u00e1sa byla \u201estar\u00e1\u201c<\/strong><\/h6>\n<p>Senzorick\u00e9 hodnocen\u00ed nep\u0159ineslo extr\u00e9mn\u00ed probl\u00e9my, ale rozd\u00edly mezi v\u00fdrobky byly znateln\u00e9. Dva vzorky bez vad z\u00edskaly velmi dobr\u00e9 hodnocen\u00ed. Naopak vinn\u00e1 klob\u00e1sa Globus skon\u010dila jen se zn\u00e1mkou uspokojiv\u011b \u2013 hodnotitel\u00e9 j\u00ed vytkli mazlavou konzistenci a \u201estarou\u201c chu\u0165. T\u00edmto term\u00ednem se ozna\u010duje nev\u00fdrazn\u00fd chu\u0165ov\u00fd vjem se zn\u00e1mkami st\u00e1rnut\u00ed v\u00fdrobku, nap\u0159\u00edklad \u017eluknut\u00ed nebo oxidace.\u00a0<em>\u201e<\/em><em>Nedostatek ov\u0161em nebyl tak siln\u00fd, aby v\u00fdrobku v\u00fdrazn\u011b zhor\u0161il hodnocen\u00ed. Podobn\u00fd probl\u00e9m, i kdy\u017e je\u0161t\u011b slab\u0161\u00ed, se objevil tak\u00e9 u lah\u016fdkov\u00e9 klob\u00e1sy Lidl\/\u0160\u0165avnat\u00e9 vep\u0159ov\u00e9 a hov\u011bz\u00ed,\u201c<\/em>\u00a0dod\u00e1v\u00e1 Hoffmannov\u00e1.<\/p>\n<h6><strong>Mikroby tentokr\u00e1t nezlobily<\/strong><\/h6>\n<p>Dobr\u00e1 zpr\u00e1va je, \u017ee se v testu neobjevily salmonely a mno\u017estv\u00ed bakteri\u00ed E. coli bylo bezpe\u010dn\u00e9.\u00a0<em>\u201eI p\u0159es bezprobl\u00e9mov\u00e9 v\u00fdsledky aktu\u00e1ln\u00edch mikrobiologick\u00fdch zkou\u0161ek bychom m\u011bli b\u00fdt p\u0159i pr\u00e1ci s\u00a0vinn\u00fdmi klob\u00e1sami opatrn\u00ed. Zku\u0161enost z\u00a0na\u0161ich test\u016f ukazuje, \u017ee se ne\u017e\u00e1douc\u00ed mikroorganismy v\u00a0syrov\u00e9m mase zkr\u00e1tka vyskytovat mohou. Je proto vhodn\u00e9 dodr\u017eovat n\u011bkolik z\u00e1sad: udr\u017eovat syrov\u00e9 polotovary v\u00a0nep\u0159etr\u017eit\u00e9m chladu a co nejv\u00edce zkr\u00e1tit dobu mimo lednici. D\u00e1le je t\u0159eba respektovat v\u00fdrobcem stanoven\u00e9 datum spot\u0159eby a kone\u010dn\u011b je nutn\u00e9 klob\u00e1sy p\u0159ed konzumac\u00ed d\u016fkladn\u011b tepeln\u011b o\u0161et\u0159it.
