Reforma vyhl\u00e1\u0161ky, kter\u00e1 m\u00e1 p\u0159in\u00e9st zdrav\u011bj\u0161\u00ed a udr\u017eiteln\u011bj\u0161\u00ed j\u00eddeln\u00ed\u010dky pro d\u011bti, z\u00edsk\u00e1v\u00e1 podporu p\u0159edn\u00edch l\u00e9ka\u0159\u016f, v\u00fd\u017eivov\u00fdch expert\u016f, akademik\u016f i kucha\u0159sk\u00fdch profesion\u00e1l\u016f. Za kl\u00ed\u010dov\u00e9 zm\u011bny, jako je z\u00e1kaz slazen\u00fdch n\u00e1poj\u016f nebo v\u011bt\u0161\u00ed d\u016fraz na ovoce, zeleninu a celozrnn\u00e9 potraviny, se postavila nejen \u010desk\u00e1 l\u00e9ka\u0159sk\u00e1 obec, ale tak\u00e9 Sv\u011btov\u00e1 zdravotnick\u00e1 organizace.<\/h6>\n<p>V dopise podpo\u0159ilo prob\u00edhaj\u00edc\u00ed reformu veden\u00ed Centra pro v\u00fdzkum metabolismu a v\u00fd\u017eivy 3. L\u00e9ka\u0159sk\u00e9 fakulty Univerzity Karlovy.\u00a0\u201e<em>N\u00e1vrh reformy vych\u00e1z\u00ed z podklad\u016f v oblasti v\u00fdzkumu v\u00fd\u017eivy d\u011bt\u00ed a dosp\u00edvaj\u00edc\u00edch, nashrom\u00e1\u017ed\u011bn\u00fdch v posledn\u00edch dvaceti letech. V\u011bcn\u011b koresponduje s podobn\u00fdmi n\u00e1vrhy v oblasti \u0161koln\u00edho stravov\u00e1n\u00ed v mnoha evropsk\u00fdch zem\u00edch,<\/em>\u201d\u00a0zmi\u0148uj\u00ed ve sv\u00e9m dopise diabetolog a b\u00fdval\u00fd d\u011bkan 3.l\u00e9ka\u0159sk\u00e9 fakulty Michal And\u011bl, hygienik v\u00fd\u017eivy a vedouc\u00ed katedry hygieny, epidemiologie a preventivn\u00edho l\u00e9ka\u0159stv\u00ed Pavel Dlouh\u00fd, a odborn\u00edk v oblasti diabetologie a klinick\u00e9 v\u00fd\u017eivy Jan Gojda.\u00a0<em>\u201e\u0160koln\u00ed stravov\u00e1n\u00ed v\u0161ak nem\u016f\u017ee b\u00fdt redukov\u00e1no jen na p\u0159\u00edjem nezbytn\u00fdch \u017eivin, ale tak\u00e9 na mo\u017enost z\u00edsk\u00e1n\u00ed v\u00fd\u017eivov\u00fdch n\u00e1vyk\u1ee7, a tedy i v\u00fdchovu k spr\u00e1vn\u00e9 volb\u011b potravin,\u201c<\/em>\u00a0dod\u00e1vaj\u00ed.<\/p>\n<p><em>\u201eD\u011bkuji v\u0161em odborn\u00edk\u016fm, kte\u0159\u00ed se k podpo\u0159e p\u0159ipravovan\u00fdch krok\u016f p\u0159ihl\u00e1sili. Jejich vyj\u00e1d\u0159en\u00ed potvrzuj\u00ed, \u017ee kroky, na nich\u017e intenzivn\u011b pracujeme u\u017e n\u011bkolik let, m\u00ed\u0159\u00ed spr\u00e1vn\u00fdm sm\u011brem. Zdrav\u00e9 a chutn\u00e9 \u0161koln\u00ed ob\u011bdy jsou investic\u00ed do budoucnosti ka\u017ed\u00e9ho d\u00edt\u011bte a jsem hrd\u00fd, \u017ee na t\u00e9to zm\u011bn\u011b m\u016f\u017eeme spolupracovat nap\u0159\u00ed\u010d resorty i profesemi,\u201c<\/em> d\u011bkuje za obdr\u017eenou podporu ministr zdravotnictv\u00ed Vlastimil V\u00e1lek. Pozitivn\u00ed stanovisko dorazilo tak\u00e9 z L\u00e9ka\u0159sk\u00e9 fakulty Masarykovy univerzity, kde Zuzana Derflerov\u00e1 Br\u00e1zdov\u00e1, garantka studijn\u00edho program\u00a0V\u00fd\u017eiva dosp\u011bl\u00fdch a d\u011bt\u00ed, spole\u010dn\u011b s p\u0159ednostou \u00fastavu ve\u0159ejn\u00e9ho zdrav\u00ed Michalem Ko\u0161\u010d\u00edkem zd\u016fraz\u0148uje:\u00a0\u201e<em>Navr\u017een\u00e9 zm\u011bny v\u011brn\u011b kop\u00edruj\u00ed nejaktu\u00e1ln\u011bj\u0161\u00ed evropsk\u00e1 a americk\u00e1 doporu\u010den\u00ed a p\u0159edstavuj\u00ed miln\u00edk pro zdrav\u00ed i udr\u017eitelnost \u010desk\u00e9ho \u0161koln\u00edho stravov\u00e1n\u00ed.\u201c<\/em>\u00a0S jejich vyj\u00e1d\u0159en\u00edmi souzn\u00ed i \u0159editelka St\u00e1tn\u00edho zdravotn\u00edho \u00fastavu a hlavn\u00ed hygieni\u010dka Barbora Mackov\u00e1.\u00a0\u201e<em>\u0160koln\u00ed stravov\u00e1n\u00ed je jedn\u00edm z kl\u00ed\u010dov\u00fdch n\u00e1stroj\u016f prevence a v\u00fdchovy ke zdrav\u00fdm n\u00e1vyk\u016fm. Velmi si v\u00e1\u017e\u00edm toho, \u017ee kolegyn\u011b a kolegov\u00e9 z akademick\u00e9 obce i praxe potvrdili pot\u0159ebnost zm\u011bn navr\u017een\u00fdch St\u00e1tn\u00edm zdravotn\u00edm \u00fastavem. Jejich jednozna\u010dn\u00e1 podpora je pro n\u00e1s z\u00e1vazkem pracovat na zlep\u0161en\u00ed \u0161koln\u00edho stravov\u00e1n\u00ed i nad\u00e1le,\u201d<\/em>\u00a0uv\u00e1d\u00ed.<\/p>\n<p>Obdobn\u011b podporuje zn\u011bn\u00ed vyhl\u00e1\u0161ky i Dana M\u00fcllerov\u00e1,\u00a0\u010dlenka v\u00fdboru obezitologick\u00e9 spole\u010dnosti z \u00fastavu hygieny a preventivn\u00ed medic\u00edny l\u00e9ka\u0159sk\u00e9 fakulty v Plzni.\u00a0\u201e<em>Navrhovan\u00e1 novela vyhl\u00e1\u0161ky proto p\u0159esn\u011b adresuje hlavn\u00ed determinanty d\u011btsk\u00e9 obezity. Posiluje zastoupen\u00ed ovoce, zeleniny, lu\u0161t\u011bnin a celozrnn\u00fdch obilovin, \u010d\u00edm\u017e zvy\u0161uje p\u0159\u00edjem vl\u00e1kniny a mikro\u017eivin. \u00dapln\u00e9 odstran\u011bn\u00ed slazen\u00fdch n\u00e1poj\u016f ze \u0161koln\u00edho prost\u0159ed\u00ed eliminuje v dob\u011b ob\u011bda p\u0159\u00edstup k v\u00fdznamn\u00e9mu zdroji rychle vst\u0159ebateln\u00fdch cukr\u016f. Stejn\u011b d\u016fle\u017eit\u00e9 je vylou\u010den\u00ed dehydratovan\u00fdch sm\u011bs\u00ed a instantn\u00edch polotovar\u016f, kter\u00e9 do j\u00eddeln\u00ed\u010dku p\u0159in\u00e1\u0161ej\u00ed nadbytek soli, nasycen\u00fdch tuk\u016f a aditiv, ani\u017e by zvy\u0161ovaly jeho nutri\u010dn\u00ed hodnotu.\u201d<\/em><\/p>\n<p>Se souladem zm\u011bn a nutri\u010dn\u00edch doporu\u010den\u00ed souzn\u00ed i m\u00edstop\u0159edseda \u010desk\u00e9 asociace preventivn\u00ed kardiologie Michal Vrabl\u00edk z 1.L\u00e9ka\u0159sk\u00e9 fakulty Univerzity Karlovy.\u00a0\u201e<em>Tato zm\u011bna je pln\u011b v souladu s tezemi N\u00e1rodn\u00edho kardiovaskul\u00e1rn\u00edho pl\u00e1nu \u010cR 2025-2035, kter\u00fd byl schv\u00e1len vl\u00e1dou \u010cesk\u00e9 republiky v prosinci 2024. Novelizace syst\u00e9mu \u0161koln\u00edho stravov\u00e1n\u00ed, kter\u00e9 bude odpov\u00eddat modern\u00edm poznatk\u016fm pat\u0159\u00ed mezi d\u016fle\u017eit\u00e9 kroky implementace tohoto pl\u00e1nu,<\/em>\u201d\u00a0dod\u00e1v\u00e1.\u00a0Navr\u017een\u00e9 kroky pak kvituje I Rostislav Ma\u010far, d\u011bkan l\u00e9ka\u0159sk\u00e9 fakulty v Ostrav\u011b, kter\u00fd nav\u00edc zd\u016fraz\u0148uje negativn\u00ed dopady obezity, jako nemoci vypl\u00fdvaj\u00edc\u00ed z nevyv\u00e1\u017een\u00e9 stravy, na pr\u016fb\u011bh infek\u010dn\u00edch chorob.\u00a0\u201e<em>V roli l\u00e9ka\u0159e, pedagoga i v\u00fdzkumn\u00edka zab\u00fdvaj\u00edc\u00edho se prevenc\u00ed proto novelu pln\u011b podporuji.\u201d<\/em><\/p>\n<p>S \u010desk\u00fdmi odborn\u00edky pak souhlas\u00ed Sv\u011btov\u00e1 zdravotnick\u00e1 organizace (WHO), kter\u00e1 na \u017e\u00e1dost St\u00e1tn\u00edho zdravotn\u00edho \u00fastavu hodnotila zejm\u00e9na soulad n\u011bkter\u00fdch opat\u0159en\u00ed s mezin\u00e1rodn\u00edmi doporu\u010den\u00edmi a prax\u00ed.\u00a0<em>\u201eRozhodnut\u00ed zak\u00e1zat n\u00e1poje slazen\u00e9 cukrem ve \u0161koln\u00edch prostor\u00e1ch je chv\u00e1lihodn\u00e9 a skute\u010dn\u011b z\u00e1sadn\u00ed pro implementaci doporu\u010den\u00ed. Konzumace i jedin\u00e9ho slazen\u00e9ho n\u00e1poje p\u0159ibli\u017euje d\u011bti k maxim\u00e1ln\u00ed doporu\u010den\u00e9 hranici. Z\u00e1kaz slazen\u00fdch n\u00e1poj\u016f ve \u0161koln\u00edch prostor\u00e1ch tak\u00e9 zaji\u0161\u0165uje, \u017ee \u0161koly nab\u00edzej\u00ed d\u011btem zdrav\u00e9 stravovac\u00ed prost\u0159ed\u00ed. Ta tak\u00e9 ocenila i omezen\u00ed pou\u017e\u00edv\u00e1n\u00ed dehydratovan\u00fdch sm\u011bs\u00ed s vysok\u00fdm obsahem soli a v\u011bt\u0161\u00ed d\u016fraz na ovoce, zeleninu, lu\u0161t\u011bniny a celozrnn\u00e9 obiloviny ve \u0161koln\u00edch j\u00eddeln\u00e1ch. Omezen\u00ed slazen\u00fdch n\u00e1poj\u016f pak kvituje i \u010cesk\u00e1 stomatologick\u00e1 komora. Ta ve sv\u00e9m stanovisku takt\u00e9\u017e podporuje z\u00e1kaz distribuce n\u00e1poj\u016f s voln\u00fdmi cukry ve \u0161koln\u00edch za\u0159\u00edzen\u00edch, v\u010detn\u011b \u0161koln\u00edch bufet\u016f, automat\u016f a ob\u011bdov\u00fdch menu, podporu dostupnosti \u010dist\u00e9 pitn\u00e9 vody ve \u0161kol\u00e1ch (zdarma a neomezen\u011b) i vzd\u011bl\u00e1v\u00e1n\u00ed d\u011bt\u00ed a rodi\u010d\u016f v oblasti v\u00fd\u017eivy a or\u00e1ln\u00ed prevence, v souladu s r\u00e1mcov\u00fdm vzd\u011bl\u00e1vac\u00edm programem.<\/p>\n<p>St\u00e1tn\u00ed zdravotn\u00ed \u00fastav tak\u00e9 obdr\u017eel\u00a0Otev\u0159en\u00fd dopis nutri\u010dn\u00edch terapeut\u016f, kte\u0159\u00ed podporuj\u00ed navr\u017een\u00e9 zm\u011bny a jejich implementaci. V n\u011bm krom\u011b odborn\u00e9 podlo\u017eenosti navr\u017een\u00fdch zm\u011bn standardn\u00edho spot\u0159ebn\u00edho ko\u0161e, dle kter\u00e9ho va\u0159\u00ed drtiv\u00e1 v\u011bt\u0161ina \u0161kol, oce\u0148uj\u00ed i aktualizaci flexi ko\u0161e, kter\u00fd pom\u016f\u017ee minimalizovat rizika u alternativn\u011b se stravuj\u00edc\u00ed populace.<\/p>\n<p><strong>Ambasadorsk\u00e1 s\u00ed\u0165 kucha\u0159\u016f je p\u0159ipravena \u0161kol\u00e1m pomoci<\/strong><\/p>\n<p>A nejen akademici. Projekt M\u00e1me to na tal\u00ed\u0159i vytvo\u0159il skupinu patn\u00e1cti kucha\u0159sk\u00fdch ambasador\u016f se zku\u0161enost\u00ed v oblasti institucion\u00e1ln\u00edho stravov\u00e1n\u00ed. Ti cht\u011bj\u00ed poskytovat metodickou podporu j\u00eddeln\u00e1m p\u0159i zav\u00e1d\u011bn\u00ed nov\u00fdch pravidel. Spole\u010dn\u011b s odborn\u00edky St\u00e1tn\u00edho zdravotn\u00edho \u00fastavu tak ji\u017e te\u010f dokon\u010duj\u00ed prvn\u00ed sadu podp\u016frn\u00fdch materi\u00e1l\u016f, kter\u00e9 pomohou j\u00eddeln\u00e1m implementovat sn\u00e1ze nov\u00e1 pravidla.\u00a0\u201e<em>Se \u0161koln\u00edmi j\u00eddelnami spolupracuji dlouhodob\u011b, zm\u011bny, kter\u00e9 jsou nachyst\u00e1ny mi d\u00e1vaj\u00ed velk\u00fd smysl a nevid\u00edm opravdu moc praktick\u00fdch p\u0159ek\u00e1\u017eek je aplikovat do praxe. Velmi si v\u00e1\u017e\u00edm ob\u011btav\u00e9 pr\u00e1ce pan\u00ed kucha\u0159ek a kucha\u0159\u016f ve \u0161koln\u00edch j\u00eddeln\u00e1ch a samoz\u0159ejm\u011b jim jde o to, aby d\u011btem hlavn\u011b chutnalo. I pro n\u011b je nejv\u011bt\u0161\u00ed pochvala pr\u00e1zdn\u00fd tal\u00ed\u0159. Jako ambasado\u0159i projektu M\u00e1me to na tal\u00ed\u0159i jsme nyn\u00ed p\u0159ipraveni poradit jim n\u011bjak\u00e9 triky a rady, aby se do j\u00eddel zakomponovaly hrav\u011b a nen\u00e1siln\u011b suroviny, jako celozrnn\u00e9 obiloviny, lu\u0161t\u011bniny nebo ryby. Tedy suroviny, se kter\u00fdmi \u010dasto ani doma neum\u00edme moc dob\u0159e pracovat,\u201c<\/em>\u00a0\u0159\u00edk\u00e1 \u0161\u00e9fkucha\u0159-ambasador projektu Luk\u00e1\u0161 Uher.<\/p>\n<p><strong>Co novela p\u0159inese d\u011btem i \u0161kol\u00e1m<\/strong><\/p>\n<p>Revidovan\u00e1 vyhl\u00e1\u0161ka omezuje p\u0159\u00edjem cukru a soli, i d\u00edky tomu, \u017ee nepo\u010d\u00edt\u00e1 se slazen\u00fdmi n\u00e1poji a ultra-zpracovan\u00fdmi dehydratovan\u00fdmi v\u00fdrobky. Naopak podporuje vy\u0161\u0161\u00ed p\u0159\u00edjem ovoce, zeleniny a db\u00e1 na pestrost nab\u00eddky.
