Silvestr u\u017e klepe na dve\u0159e a utopenci nesm\u00ed chyb\u011bt! Nakl\u00e1dan\u00e9 pochoutky pat\u0159\u00ed na n\u00e1\u0161 st\u016fl od nepam\u011bti. Chutn\u00fd vypro\u0161\u0165ov\u00e1k, kter\u00fd od nepam\u011bti rozjas\u0148uje r\u00e1na po vesel\u00e9 noci. Variac\u00ed je nep\u0159ebern\u011b, ale z\u00e1kladn\u00ed recept je l\u00e9ty osv\u011bd\u010den\u00fd &#8211; p\u0159\u00edjemn\u011b pikantn\u00ed a n\u00e1lev lahodn\u011b kysel\u00fd.<\/h6>\n<p>Utopenci jsou specialitou, na kterou \u010ce\u0161i nedaj\u00ed dopustit. Utopenci jsou vedle nakl\u00e1dan\u00e9ho hermel\u00ednu typick\u00fd \u201epij\u00e1ck\u00fd\u201c z\u00e1kusek, kter\u00fd se ov\u0161em z hospod a n\u00e1leven p\u0159esunul do dom\u00e1c\u00edch sp\u00ed\u017e\u00ed. Utopence se tak \u201edomestifikovaly\u201c, \u017ee se jejich konzumace neomezuje pouze na oslavy a jin\u00e9 p\u0159\u00edle\u017eitosti k napit\u00ed. Utopence si lid\u00e9 r\u00e1di daj\u00ed i k mal\u00e9 ve\u010de\u0159i, \u010di jen tak, na \u201espraven\u00ed\u201c chuti. Aby byly utopence t\u00e9 nejlep\u0161\u00ed chuti, m\u011bli by je p\u0159ipravovat mu\u017ei, Proto\u017ee nalo\u017eit utopence nen\u00ed jen tak. Je to doslova ritu\u00e1l, pro kter\u00fd \u017eeny \u201enemaj\u00ed ty spr\u00e1vn\u00e9 chu\u0165ov\u00e9 bu\u0148ky\u201c.<\/p>\n<p>I kdy\u017e zn\u00e1 utopence snad ka\u017ed\u00fd, p\u0159\u00edb\u011bh o jejich vzniku tak zn\u00e1m\u00fd nen\u00ed. P\u0159ed asi 100 lety pr\u00fd tuto uzeninovou pochutinu vymyslel jist\u00fd pan \u0160am\u00e1nek, kter\u00fd vlastnil ml\u00fdn a hospodu n\u011bkde na Berounsku. P\u0159em\u00fd\u0161lel, jak prodlou\u017eit trvanlivost \u0161pek\u00e1\u010dk\u016f a uchov\u00e1vat je i mimo lednici, a tak jej napadlo, nalo\u017eit je do l\u00e1ku z octa. Host\u00e9 jeho hospody si tuto dobrotu obl\u00edbili a brzy se za nimi za\u010dali sj\u00ed\u017ed\u011bt lid\u00e9 z bl\u00edzka i zdaleka a hospoda se stala kyselou bu\u0159tovou specialitou vyhl\u00e1\u0161en\u00e1.<\/p>\n<p>I kdy\u017e hospodsk\u00fd \u0160am\u00e1nek takto v\u00fdznamn\u011b prosp\u011bl \u010desk\u00e9 gastronomii, skon\u010dil neslavn\u011b. Utopil se toti\u017e p\u0159i oprav\u011b ml\u00fdnsk\u00e9ho kola. A proto\u017ee lidsk\u00e1 tvo\u0159ivost je n\u011bkdy a\u017e ironicky krut\u00e1, za\u010dalo se \u0160am\u00e1nkov\u011b specialit\u011b \u0159\u00edkat utopenci. Mo\u017en\u00e1 je ale n\u00e1zev mnohem prozai\u010dt\u011bj\u0161\u00ed a je odvozen jen od v n\u00e1levu utopen\u00fdch bu\u0159t\u016f.<br \/>\nZa dobr\u00fdm \u0161pek\u00e1\u010dkem \u0161el bych sv\u011bta kraj&#8230; Pozor nezam\u011bnit s bu\u0159ty nebo op\u00e9k\u00e1\u010dky, kter\u00e9 neobsahuji tolik procent masa. Po\u0159\u00e1dn\u00fd \u0161pek\u00e1\u010dek je v\u011bc uzen\u00e1\u0159sk\u00e9 cti. Pevn\u00fd, ale z\u00e1rove\u0148 pru\u017en\u011b m\u011bkk\u00fd \u0161pek\u00e1\u010dek. Vo\u0148av\u00fd, uzen\u00fd a \u0161\u0165avnat\u00fd. Lehou\u010dce slan\u00fd a masov\u00fd, s kousky uzen\u00e9ho \u0161peku, jen radost se do n\u011bj zakousnout.<\/p>\n<p>Sv\u011btlo sv\u011bta spat\u0159il poctiv\u00fd \u010desk\u00fd \u0161pek\u00e1\u010dek u\u017e v roce 1891 u p\u0159\u00edle\u017eitosti Zemsk\u00e9 jubilejn\u00ed v\u00fdstavy v Praze, kde st\u00e1la kompletn\u00ed uzen\u00e1\u0159sk\u00e1 d\u00edlna. Plno bylo ale p\u0159edev\u0161\u00edm u stanu uzen\u00e1\u0159sk\u00e9 d\u00edlny. \u0160pek\u00e1\u010dky se tehdy prod\u00e1valy je\u0161t\u011b pod univerz\u00e1ln\u00edm n\u00e1zvem uzenky a je\u0161t\u011b tepl\u00e9 se rovnou z ud\u00edrny prod\u00e1valy s k\u0159enem a slan\u00fdm rohl\u00edkem za 8 krejcar\u016f na pap\u00edrov\u00e9m tal\u00ed\u0159ku.<\/p>\n<p>Za jejich lahodnou chut\u00ed stoj\u00ed p\u0159edev\u0161\u00edm l\u00e1k, ve kter\u00e9m jsou \u0161pek\u00e1\u010dky nalo\u017eeny. I kdy\u017e mnoz\u00ed spol\u00e9haj\u00ed na osv\u011bd\u010den\u00e9 recepty, v\u011bzte, \u017ee p\u0159i p\u0159\u00edprav\u011b utopenc\u016f se meze nekladou.
