S\u00e1dlo a loj vypou\u0161t\u011bn\u00e9 aneb vysma\u017een\u00e9 b\u00fdv\u00e1.<\/em> (Jan Amos Komensk\u00fd, Orbis sensualium pictus)<\/h6>\n<p>Martinsk\u00fd \u010das ve v\u00e1s zanech\u00e1 h\u0159ejiv\u00e9 vzpom\u00ednky prvn\u00ed podzimn\u00ed zab\u00edja\u010dky a nechyb\u011blo ani hov\u011bz\u00ed maso s n\u011bkterou z tepl\u00fdch om\u00e1\u010dek. Na sv\u00e1tek svat\u00e9ho Martina se po\u0159\u00e1daly zabija\u010dky a hody, souvis\u00ed to s ukon\u010den\u00edm zem\u011bd\u011blsk\u00e9ho roku, uskladn\u011bn\u00edm \u00farody a odvody povinn\u00e9 \u010d\u00e1sti vrchnosti. V\u017edy\u0165 i p\u0159\u00edslov\u00ed \u0159\u00edk\u00e1, \u017ee \u201ena ka\u017ed\u00e9ho vep\u0159e dojde na svat\u00e9ho Martina\u201c. K zabija\u010dce se tak\u00e9 v minulosti pojily n\u011bkter\u00e9 ob\u0159ady a zvyky. P\u0159ed por\u00e1\u017ekou bylo nap\u0159\u00edklad prase souzeno a \u010detl se mu rozsudek. Projevem nejv\u011bt\u0161\u00ed pocty bylo sn\u011bzen\u00ed vep\u0159ov\u00e9ho mozku. Zabija\u010dka se stala symbolem \u010desk\u00e9 hostiny na posv\u00edcen\u00ed. B\u011bhem n\u00ed se pod\u00e1vala spousta \u0161\u0165avnat\u00fdch a vo\u0148av\u00fdch dobrot, z nich\u017e mnoh\u00e9 jsou u\u017e zapomenuty.\u00a0 Nejd\u016fle\u017eit\u011bj\u0161\u00edm produktem zabija\u010dky b\u00fdvalo s\u00e1dlo, kter\u00fdm se mastilo po cel\u00fd rok a jeho\u017e spot\u0159eba byla<br \/>\nvysok\u00e1.<\/p>\n<p>Den sv\u00e1t\u00e9ho Martina byl d\u016fle\u017eit\u00fdm hospod\u00e1\u0159sk\u00fdm mezn\u00edkem, kon\u010dila pastva, chystaly se z\u00e1soby na zimu, konzervovaly se pokrmy a dokva\u0161ovalo se v\u00edno z ovoce v horsk\u00fdch oblastech. Doby, kdy si ka\u017ed\u00fd na vesnici v chl\u00edvku vykrmoval prase, jsou pry\u010d.<\/p>\n<p>Pr\u016fb\u011bh zab\u00edje\u010dky m\u00e1 prakticky po stalet\u00ed ust\u00e1len\u00fd pr\u016fb\u011bh. Atmosf\u00e9ra m\u016f\u017ee b\u00fdt dokonce takov\u00e1, \u017ee kdy\u017e zr\u00e1na v mrazu na selsk\u00e9m dvo\u0159e mezi stodolou, ma\u0161tal\u00ed a chl\u00edvky uvid\u00edte \u0159ezn\u00edka a jeho pomocn\u00edky v akci, tak si m\u016f\u017eete p\u0159ipadat, \u017ee jste se ocitli na Breughelov\u011b obrazu, v 19. stolet\u00ed na \u010desk\u00e9 vsi, ale p\u0159itom jste st\u00e1le v sou\u010dasnosti.<\/p>\n<p>Ve st\u0159edov\u011bku b\u00fdvalo vep\u0159ov\u00e9 maso na stole prost\u00fdch lid\u00ed, \u0161lechta d\u00e1vala p\u0159ednost zv\u011b\u0159in\u011b a \u201evzne\u0161en\u011bj\u0161\u00edm\u201c druh\u016fm masa. Zabija\u010dka, jako spole\u010densk\u00e1 ud\u00e1lost, byla v podstat\u011b setk\u00e1n\u00edm cel\u00e9 rodiny, p\u0159\u00edbuzn\u00fdch a soused\u016f. Ka\u017ed\u00fd m\u011bl n\u011bjak\u00fd \u00fakol a zodpov\u011bdnost. Muselo se nachystat n\u00e1dob\u00ed, hrnce a nabrou\u0161en\u00e9 no\u017ee. Teti\u010dky napekly housky a neslazen\u00e9 buchty. Namlelo se ko\u0159en\u00ed, oloupala zelenina a nava\u0159ily kroupy na jelita. Za\u010d\u00ednalo se ji\u017e za rozb\u0159esku, kdy p\u0159ich\u00e1zel \u0159ezn\u00edk.<\/p>\n<p>Po por\u00e1\u017ece prasete n\u00e1sledovalo vykrven\u00ed, o\u010di\u0161t\u011bn\u00ed, porcov\u00e1n\u00ed masa a zpracov\u00e1n\u00ed vnit\u0159nost\u00ed. Tradi\u010dn\u011b se pak zu\u017eitkovalo cel\u00e9 prase, aby nic nep\u0159i\u0161lo na zmar. Jelita jsou ta tmav\u00e1, jitrnice sv\u011btl\u00e9. To\u0165 z\u00e1kladn\u00ed rozli\u0161en\u00ed. Ale rozd\u00edl a to v\u00fdrazn\u00fd je i v chuti. Jel\u00edtka se vyr\u00e1b\u011bj\u00ed p\u0159edev\u0161\u00edm z m\u00e9n\u011b hodnotn\u00e9ho masa, jako jsou hlavy, b\u016f\u010dek, pl\u00edce nebo j\u00e1tra. V\u0161echno maso se po\u0159\u00e1dn\u011b semele, pak se p\u0159id\u00e1 krev a kroupy nebo \u017eemle. Pr\u00e1v\u011b d\u00edky krvi jsou jelita tmav\u00e1. D\u00e1le se jel\u00edtka po\u0159\u00e1dn\u011b oko\u0159en\u00ed cibulkou, \u010desnekem, sol\u00ed, km\u00ednem a major\u00e1nkou a daj\u00ed se va\u0159it. Jsou skv\u011bl\u00e1 ope\u010den\u00e1 na s\u00e1dle, j\u00edte je jen tak s chlebem nebo se zel\u00edm a bramborem.<\/p>\n<p>Bez jitrnice by to nebyla \u017e\u00e1dn\u00e1 zabija\u010dka! Je to tradi\u010dn\u00ed zabija\u010dkov\u00fd produkt a podobn\u011b jako jel\u00edtka se i jitrnice d\u011blaj\u00ed z \u201chor\u0161\u00edho\u201d masa, kter\u00e9 se pomele. Nej\u010dast\u011bji jde o maso z hlavy, jater, ale ocitnout se v nich m\u016f\u017ee i k\u016f\u017ee \u010di slezina. Jemnost a sv\u011btlou barvu jim dod\u00e1 namo\u010den\u00e9 a vy\u017ed\u00edman\u00e9 b\u00edl\u00e9 pe\u010divo a samoz\u0159ejm\u011b nesm\u00ed chyb\u011bt tradi\u010dn\u00ed zabija\u010dkov\u00e9 ko\u0159en\u00ed. V\u0161e se pln\u00ed do perfektn\u011b vy\u010di\u0161t\u011bn\u00fdch st\u0159\u00edvek. A je\u0161t\u011b ud\u011bl\u00e1me prejt, a to je v podstat\u011b n\u00e1pl\u0148 v\u00fd\u0161e zm\u00edn\u011bn\u00fdch jitrni\u010dek a jelit, ale d\u00e1 se j\u00edst i samostatn\u011b, nejl\u00e9pe kr\u00e1sn\u011b ope\u010den\u00fd na p\u00e1nvi nebo v pek\u00e1\u010di. Do prejtu p\u0159ijde v\u0161e, co nen\u00ed kvalitn\u00ed a hlavn\u011b dostatek b\u00edl\u00e9ho pe\u010diva. Prejt m\u016f\u017ee pak z\u016fstat b\u00edl\u00fd nebo se je\u0161t\u011b dochut\u00ed krv\u00ed.<\/p>\n<p>Prdela\u010dka&#8230; N\u00e1zev jako zvon! Prdela\u010dka je jedna z nejtypi\u010dt\u011bj\u0161\u00edch zabija\u010dkov\u00fdch pochoutek a jde o hustou a v\u00fd\u017eivnou pol\u00e9vku. V podstat\u011b je to v\u00fdvar, kde se va\u0159ily jitrnice, jelita a ovar a stejn\u011b jako jelita a jitrnice m\u016f\u017ee b\u00fdt sv\u011btl\u00e1 nebo tmav\u00e1. Tahle ovarov\u00e1 pol\u00e9vka m\u00e1 s\u00edlu i d\u00edky notn\u00e9 d\u00e1vce \u010desneku, ko\u0159en\u00ed a krup, kter\u00fdmi se zahu\u0161\u0165uje. Sama o sob\u011b vyd\u00e1 za po\u0159\u00e1dn\u00e9 j\u00eddlo, ale nechte si je\u0161t\u011b m\u00edsto, jedeme d\u00e1l!<\/p>\n<p>Mus\u00edme tak\u00e9 ochutnat zabija\u010dkov\u00e9 \u0161kvarky, to je mana sama o sob\u011b. Tu\u010dn\u00e1 k\u016f\u017ee z prasete pln\u00e1 s\u00e1dla nep\u0159ijde na zmar, s\u00e1dlo se na\u0159e\u017ee na kostky a pak se \u0161kva\u0159\u00ed ve velk\u00fdch hrnc\u00edch. S\u00e1dlo se \u0161kvarky je pot\u0159eba po\u0159\u00e1d m\u00edchat, proto\u017ee sta\u010d\u00ed chvili\u010dka, aby se p\u0159ip\u00e1lilo. N\u011bkde se p\u0159i \u0161kva\u0159en\u00ed pou\u017e\u00edv\u00e1 i p\u0159id\u00e1n\u00ed ml\u00e9ka. Po u\u0161kva\u0159en\u00ed se s\u00e1dlo slije a \u0161kvarky se pod\u00e1vaj\u00ed osolen\u00e9 a okm\u00ednovan\u00e9 s \u010derstv\u00fdm chlebem.<\/p>\n<p>Ovar se d\u011bl\u00e1 z tu\u010dn\u00e9ho masa jako je koleno, hlava, krkovice nebo t\u0159eba plecko. Tohle maso se opravdu pouze va\u0159\u00ed v osolen\u00e9 vod\u011b a tradi\u010dn\u011b se j\u00ed u\u017e b\u011bhem zabija\u010dky. Nejlep\u0161\u00ed je, kdy\u017e je m\u011bkk\u00e9 jako dort a k n\u011bmu se nastrouh\u00e1 po\u0159\u00e1dn\u011b siln\u00fd k\u0159en.<\/p>\n<p>Vrcholem zabija\u010dky byl gul\u00e1\u0161, kter\u00fd pro mnoho fajn\u0161mekr\u016f p\u0159edstavuje v\u016fbec nejlep\u0161\u00ed a nejchutn\u011bj\u0161\u00ed verzi ze v\u0161ech gul\u00e1\u0161\u016f, nebo\u0165 nab\u00edz\u00ed bohatou, a\u017e opulentn\u00ed chu\u0165. Bez toho by nebyla zabija\u010dka! Je samoz\u0159ejm\u011b vep\u0159ov\u00fd, d\u011blan\u00fd ze siln\u00e9ho masov\u00e9ho v\u00fdvaru, pln\u00fd masa a ko\u0159en\u00ed. \u010casto se k jeho p\u0159\u00edprav\u011b pou\u017e\u00edv\u00e1 krkovice. Ochucuje ho s\u00e1m \u0159ezn\u00edk, kter\u00fd zabija\u010dku \u0159\u00edd\u00ed a nab\u00eddnou v\u00e1m ho pravd\u011bpodobn\u011b na tal\u00ed\u0159i s \u010derstv\u00fdm chlebem.<\/p>\n<p>Tla\u010denku si nech\u00e1me a\u017e na p\u0159\u00ed\u0161t\u00ed dny. Pam\u011btn\u00edci poctiv\u00fdch zabija\u010dek v\u011bd\u00ed, \u017ee \u0159ezni\u010dt\u00ed mist\u0159i vyr\u00e1b\u011bli tla\u010denky v\u017edy sou\u010dasn\u011b s jitrnicemi. Do tla\u010denky pokr\u00e1jeli libov\u00e9 maso, ostatn\u00ed zu\u017eitkovali v prejtu. P\u016fvodn\u011b se masov\u00e1 sm\u011bs na tla\u010denku plnila do vep\u0159ov\u00fdch \u017ealudk\u016f, kter\u00fdm se \u0159\u00edkalo bacho\u0159inky. Po vychladnut\u00ed se \u017ealudky zat\u00ed\u017eily t\u011b\u017ek\u00fdm kamenem. V 19. stolet\u00ed se vyr\u00e1b\u011bla levn\u011bj\u0161\u00ed varianta tla\u010denky, takzvan\u00fd presvu\u0159t, p\u0159ipravovan\u00e1 p\u0159ev\u00e1\u017en\u011b ze siln\u011b ko\u0159en\u011bn\u00e9 vep\u0159ov\u00e9 krve pln\u011bn\u00e9 do obr\u00e1cen\u00fdch vep\u0159ov\u00fdch m\u011bch\u00fd\u0159\u016f.<\/p>\n<p>O vzniku tla\u010denky koluje mezi \u0159ezn\u00edky historka: Na dom\u00e1c\u00ed zab\u00edja\u010dku kdysi pozvali str\u00fd\u010dka ze sousedn\u00ed vesnice. Str\u00fd\u010dek byl velmi p\u0159i\u010dinliv\u00fd a co zbylo, d\u00e1val do pytl\u00edku, kter\u00fd m\u011bl schovan\u00fd pod kab\u00e1tem. Kousky masa, ovaru, k\u016f\u017e\u00ed, v\u0161e je\u0161t\u011b zalil b\u00edlou pol\u00e9vkou kter\u00e1 zbyla. Kdy\u017e se vracel unaven\u00fd ve\u010der dom\u016f, mrzlo a v\u0161e v pytl\u00edku ztuhlo. R\u00e1no si vzpomn\u011bl na ,,v\u00fdslu\u017eku\u201c ze zabija\u010dky, vyt\u00e1hl pytl\u00edk, nakr\u00e1jel ztuhlou hmotu a ochutnal. M\u011blo to vynikaj\u00edc\u00ed chu\u0165 a tla\u010denka byla na sv\u011bt\u011b!<\/p>\n<p>Ov\u0161em samotn\u00fd n\u00e1zev tla\u010denka se za\u010dal pou\u017e\u00edvat a\u017e za\u010d\u00e1tkem 20. stolet\u00ed.<\/p>\n<p>Neodmyslitelnou sou\u010d\u00e1st\u00ed tradi\u010dn\u00ed dom\u00e1c\u00ed zabija\u010dky bylo v\u017edy pos\u00edl\u00e1n\u00ed tzv. v\u00fdslu\u017eky. V\u00fdslu\u017eka se rozn\u00e1\u0161ela m\u00edstn\u00edm hodnost\u00e1\u0159\u016fm, po\u010d\u00ednaje far\u00e1\u0159em, starostou, velitelem hasi\u010d\u016f, \u0161af\u00e1\u0159em a kon\u010de \u0159\u00edd\u00edc\u00edm u\u010ditelem.<\/p>\n<p>K \u0161\u0165astn\u00fdm majitel\u016fm pa\u0161\u00edka se sjeli p\u0159\u00edbuzn\u00ed a v\u00fdslu\u017eku ze zabija\u010dky dost\u00e1vali nejen oni, ale i mnoz\u00ed soused\u00e9. R\u010den\u00ed, \u017ee nejv\u00edc p\u0159\u00edbuzn\u00fdch m\u00e1 prase, tak nevzniklo pro nic za nic. Na zabija\u010dce se \u010dasto objevili i velmi vzd\u00e1len\u00ed \u010dlenov\u00e9 rodiny. Sou\u010d\u00e1st\u00ed v\u00fdslu\u017eky byla v\u011bt\u0161inou jelita, jitrnice, \u0161kvarky, pol\u00e9vka \u010di \u010derstv\u011b upe\u010den\u00e9 maso a rozn\u00e1\u0161ely ji obvykle d\u011bti hospod\u00e1\u0159e. Bandasku, v n\u00ed\u017e se nosila pol\u00e9vka, pak bylo zvykem nevym\u00fdvat, aby se zabija\u010dka poda\u0159ila i dal\u0161\u00ed rok. Sekci sladk\u00e9ho pak zastoupily koblihy \u010di k\u0159ehk\u00e9 pe\u010divo bo\u017e\u00ed milosti, kter\u00e1 se sma\u017e\u00ed, jak jinak ne\u017e na vep\u0159ov\u00e9m s\u00e1dle.<\/p>\n<p>Zabija\u010dky ov\u0161em d\u00e1valy nad\u011bji i nezadan\u00fdm d\u00edvk\u00e1m. Jednou ze zabija\u010dkov\u00fdch tradic bylo, \u017ee svobodn\u00e9 d\u00edvky po skon\u010den\u00ed zabija\u010dky sesb\u00edraly kosti z prasete a rozh\u00e1zely je po zahrad\u011b.
