Na \u010derstv\u00e9m \u010desk\u00e9m ch\u0159estu si tak budeme moci pochutn\u00e1vat a\u017e do za\u010d\u00e1tku letn\u00edch pr\u00e1zdnin. D\u00edky snadn\u00e9 \u00faprav\u011b a vyu\u017eit\u00ed p\u0159i grilov\u00e1n\u00ed roste obliba zelen\u00e9ho ch\u0159estu na \u00fakor b\u00edl\u00e9ho.<\/h6>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-202098 alignright\" src=\"http:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2020\/09\/03\/tesco-logo-300x88.png\" alt=\"\" width=\"300\" height=\"88\" srcset=\"https:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2020\/09\/03\/tesco-logo-300x88.png 300w, https:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2020\/09\/03\/tesco-logo.png 414w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/>Ch\u0159est nebo lidov\u011b t\u00e9\u017e \u0161pargl byl velmi obl\u00edbenou sou\u010d\u00e1st\u00ed prvorepublikov\u00e9 kuchyn\u011b. V dob\u011b komunismu byla ale tato zelenina vn\u00edm\u00e1na jako bur\u017eoazn\u00ed p\u0159e\u017eitek, z tohoto d\u016fvodu byla tradice p\u011bstov\u00e1n\u00ed zcela zni\u010dena, stejn\u011b jako br\u00e1zdy s ch\u0159estem. S p\u0159\u00edchodem svobody se vr\u00e1til i ch\u0159est a jeho obliba rok od roku nar\u016fst\u00e1. Nezastavilo ji ani leto\u0161n\u00ed chladn\u00e9 po\u010das\u00ed, naopak tuh\u00e1 zima ch\u0159estu pomohla. V\u0161e si odpo\u010dinulo a je takt\u00e9\u017e dost vl\u00e1hy, p\u0159itom m\u00e1me za sebou nejchladn\u011bj\u0161\u00ed duben od roku 1941.<\/p>\n<p>Sklize\u0148 v minul\u00e9m roce \u010d\u00e1ste\u010dn\u011b ovlivnila pandemie Covid a hrozilo, \u017ee ch\u0159est nebude m\u00edt kdo skl\u00edzet. <em>\u201eV pr\u016fb\u011bhu lo\u0148sk\u00e9 sklizn\u011b jsme trp\u011bli akutn\u00edm nedostatkem pracovn\u00edk\u016f na pol\u00edch. Letos jich m\u00e1me na\u0161t\u011bst\u00ed dostatek. Oproti lo\u0148sku tak nen\u00ed obava, kdo \u00farodu sklid\u00ed. Jedin\u00e9, co n\u00e1s trochu brzd\u00ed, je velmi n\u00e1ro\u010dn\u00e1 logistika a administrace brig\u00e1dn\u00edk\u016f v souvislosti s dodr\u017een\u00edm proti-pandemick\u00fdch opat\u0159en\u00ed,<\/em>\u201c vysv\u011btluje Ji\u0159\u00ed \u0160af\u00e1\u0159, zakladatel spole\u010dnosti \u010cesk\u00fd ch\u0159est.<\/p>\n<p>V pr\u016fb\u011bhu sklizn\u011b se m\u011bn\u00ed i obliba ch\u0159estu. B\u00edl\u00fd m\u00e1 sv\u00e9 z\u00e1kazn\u00edky, a hlavn\u011b zkraje jara je nejv\u00edc \u017e\u00e1dan\u00fd i na \u00fakor ch\u0159estu zelen\u00e9ho. <em>\u201eU b\u00edl\u00e9ho ch\u0159estu je trochu slo\u017eit\u011bj\u0161\u00ed p\u0159\u00edprava, zelen\u00fd pak nastupuje s oteplen\u00edm a je spojen sp\u00ed\u0161e s letn\u00edmi j\u00eddly. Hlavn\u011b je obl\u00edben\u00fd na gril a minutkovou kuchyni. Pomalu tak vytla\u010duje b\u00edl\u00fd ch\u0159est. Nevy\u017eaduje t\u00e9m\u011b\u0159 \u017e\u00e1dnou p\u0159\u00edpravu, jen se u n\u011bj za\u0159\u00edznou konce,\u201c<\/em> \u0159\u00edk\u00e1 Petra Vavro, n\u00e1kup\u010d\u00ed zeleniny Tesco.<\/p>\n<p>Na chu\u0165 ch\u0159estu m\u00e1 vliv slo\u017een\u00ed p\u016fdy, ve kter\u00e9 roste a podneb\u00ed. Ch\u0159est z ji\u017en\u00ed Evropy je sice na trhu d\u0159\u00edve, ale roste na nekvalitn\u00edch p\u016fd\u00e1ch a neabsorbuje do sebe tolik chut\u011b. \u201e<em>Je proto chu\u0165ov\u011b takov\u00fd nemastn\u00fd neslan\u00fd. \u010c\u00edm je ch\u0159est z chladn\u011bj\u0161\u00edch lokalit, t\u00edm je lep\u0161\u00ed,\u201c<\/em> dod\u00e1v\u00e1 Ji\u0159\u00ed \u0160af\u00e1\u0159.<\/p>\n<p>Ch\u0159est by rozhodn\u011b nem\u011bl chyb\u011bt v na\u0161em j\u00eddeln\u00ed\u010dku, vedle nesporn\u00fdch chu\u0165ov\u00fdch kvalit m\u00e1 i \u0159adu zdravotn\u00edch benefit\u016f. Je bohat\u00fdm zdrojem b\u00edlkovin, vitam\u00ednu A, vl\u00e1kniny a kyseliny listov\u00e9. Nav\u00edc d\u00edky vysok\u00e9mu obsahu drasl\u00edku napom\u00e1h\u00e1 regulovat krevn\u00ed tlak, obsahuje i \u017eelezo a rutin, \u010d\u00edm\u017e si jeho konzumenti mohou pos\u00edlit sv\u016fj imunitn\u00ed syst\u00e9m. Dal\u0161\u00ed nespornou v\u00fdhodou je, \u017ee neobsahuje \u017e\u00e1dn\u00fd cholesterol. Jeden stonek m\u00e1 pouze 4 kalorie. Doporu\u010duje se zkonzumovat 7 stonk\u016f ch\u0159estu denn\u011b. B\u00edl\u00fd ch\u0159est je vn\u00edman\u00fd jako honosn\u011bj\u0161\u00ed a\u017e snobsk\u00fd. Snoub\u00ed se v n\u011bm jemn\u00e1 ho\u0159kost se sladkost\u00ed. Naopak zelen\u00fd je d\u00edky fotosynt\u00e9ze bez ho\u0159kosti. B\u00edl\u00fd je ale zase zdrav\u011bj\u0161\u00ed, pr\u00e1v\u011b d\u00edky ho\u0159k\u00fdm silic\u00edm.<\/p>\n<p>&nbsp;<\/p>\n<h4>Ch\u0159est t\u0159ikr\u00e1t jinak<\/h4>\n<p>Vyu\u017eit\u00ed ch\u0159estu v gastronomii je velmi pestr\u00e9. Lze z n\u011bj p\u0159ipravit lahodnou pol\u00e9vku, obalit ho ve strouhance nebo p\u0159idat do rizota. Skv\u011ble chutn\u00e1 ch\u0159est i s vyhl\u00e1\u0161enou holandskou om\u00e1\u010dkou nebo grilovan\u00fd se slaninou. Pl\u00e1tky slaniny si rozlo\u017e\u00edme na prk\u00e9nko a ka\u017ed\u00fd kousek opep\u0159\u00edme. Na vychladl\u00fd ch\u0159est nat\u00e1\u010d\u00edme pl\u00e1tek anglick\u00e9 slaniny opep\u0159enou stranou ke ch\u0159estu, v p\u0159\u00edpad\u011b pot\u0159eby upevn\u00edme p\u00e1r\u00e1tkem. P\u0159iprav\u00edme si hrnec, kde rozpust\u00edme m\u00e1slo. Do m\u00e1sla p\u0159id\u00e1me mouku a d\u016fkladn\u011b zam\u00edch\u00e1me. Do hrnce nalijeme ml\u00e9ko, v\u00fdvar a p\u0159id\u00e1me kousky ch\u0159estu. Pol\u00e9vku p\u0159ivedeme k varu. Va\u0159\u00edme asi 15 minut. Po 15 minut\u00e1ch pol\u00e9vku rozmixujeme ponorn\u00fdm mix\u00e9rem. Pol\u00e9vku ochut\u00edme sol\u00ed, pep\u0159em a nakonec vlijeme smetanu. V misce sm\u00edch\u00e1me l\u017e\u00edci p\u0159epu\u0161t\u011bn\u00e9ho m\u00e1sla se sol\u00ed a pep\u0159em a touto sm\u011bs\u00ed ch\u0159est pot\u0159eme. Pe\u010deme v troub\u011b vyh\u0159\u00e1t\u00e9 na 190 stup\u0148\u016f cca 10 minut. Mezit\u00edm si p\u0159iprav\u00edme holandskou om\u00e1\u010dku. Nad p\u00e1rou u\u0161leh\u00e1me \u017eloutky. Vznikne n\u00e1m nad\u00fdchan\u00e1 p\u011bna, do kter\u00e9 pomalu za\u0161leh\u00e1v\u00e1me p\u0159epu\u0161t\u011bn\u00e9 m\u00e1slo, a\u017e z\u00edsk\u00e1me hladk\u00fd kr\u00e9m. Ochut\u00edme sol\u00ed, pep\u0159em a citronovou \u0161\u0165\u00e1vou.
