A\u0165 u\u017e se chyst\u00e1te na ber\u00e1nka, nebo oby\u010dejnou b\u00e1bovku, nenechte si uj\u00edt aktu\u00e1ln\u00ed test kyp\u0159ic\u00edch pr\u00e1\u0161k\u016f. Do laborato\u0159e jich dTest poslal celkem dvacet, z toho dvan\u00e1ct s fosfore\u010dnany a sodou a osm v kombinaci sody a vinn\u00e9ho kamene. St\u011b\u017eejn\u00ed praktickou zkou\u0161ku p\u0159edstavovalo pe\u010den\u00ed b\u00e1bovek z t\u0159en\u00e9ho t\u011bsta podle toto\u017en\u00e9ho receptu, pouze s r\u016fzn\u00fdmi d\u00e1vkami kyp\u0159ic\u00edho pr\u00e1\u0161ku. Ty laborato\u0159 odm\u011b\u0159ovala podle n\u00e1vod\u016f uveden\u00fdch na obalech. Pot\u00e9 se m\u011b\u0159il objem t\u011bsta p\u0159ed upe\u010den\u00edm a po n\u011bm.<\/p>\n<p><em>\u201eV t\u00e9to \u010d\u00e1sti testu dos\u00e1hly v\u00edce ne\u017e 40procentn\u00edho n\u00e1r\u016fstu objemu t\u011bsta jen t\u0159i kyp\u0159ic\u00ed pr\u00e1\u0161ky, kter\u00e9 si odnesly velmi dobr\u00e9 a dobr\u00e9 hodnocen\u00ed. Zbytek testovan\u00fdch vzork\u016f ode\u0161el s uspokojiv\u00fdmi \u010di dostate\u010dn\u00fdmi zn\u00e1mkami,&#8221;<\/em> popisuje \u0161\u00e9fredaktorka \u010dasopisu dTest Hana Hoffmannov\u00e1. Nejni\u017e\u0161\u00ed n\u00e1r\u016fst objemu dTest zaznamenal u b\u00e1bovky upe\u010den\u00e9 s pomoc\u00ed p\u0159\u00edpravku Labeta Kyp\u0159ic\u00ed pr\u00e1\u0161ek do pe\u010diva bez lepku.<\/p>\n<p>Druhou \u010d\u00e1st zn\u00e1mky za b\u00e1bovku p\u0159edstavuj\u00ed v\u00fdsledky senzorick\u00e9ho posouzen\u00ed k\u016frky a konzistence st\u0159\u00eddky. Ty dopadly, ve srovn\u00e1n\u00ed s m\u011b\u0159en\u00edm objemu, mnohem l\u00e9pe. Za ide\u00e1l se pova\u017eovala stejnom\u011brn\u011b prope\u010den\u00e1 a vybarven\u00e1 b\u00e1bovka s rovnom\u011brn\u011b p\u00f3rovitou strukturou na \u0159ezu. S nejhor\u0161\u00ed dostate\u010dnou zn\u00e1mkou za upe\u010den\u00ed b\u00e1bovky ode\u0161el z testu Dr. Oetker Kyp\u0159ic\u00ed pr\u00e1\u0161ek s vinn\u00fdm kamenem, kter\u00fd nep\u0159esv\u011bd\u010dil ani n\u00e1r\u016fstem objemu, ani prope\u010den\u00edm.<\/p>\n<p>Dal\u0161\u00ed \u010d\u00e1st testu se zam\u011b\u0159ila na p\u0159\u00edpravu \u010dokol\u00e1dov\u00fdch su\u0161enek. I zde \u0161lo o nabyt\u00ed objemu, ale tak\u00e9 o vzhled a konzistenci hotov\u00fdch v\u00fdrobk\u016f. Tak\u00e9 zde laborato\u0159 pou\u017eila stejn\u00fd recept a odli\u0161n\u00e9 d\u00e1vky kyp\u0159ic\u00edho pr\u00e1\u0161ku dle pokyn\u016f v\u00fdrobce.<\/p>\n<p><em>\u201eZa n\u00e1r\u016fst v\u00fd\u0161ky su\u0161enek po upe\u010den\u00ed jsme rozdali hned t\u0159i velmi dobr\u00e9 zn\u00e1mky. Za v\u00edce ne\u017e 60procentn\u00ed zv\u00fd\u0161en\u00ed si ji odnesly v\u00fdrobky Penny\/Karlova koruna Kyp\u0159ic\u00ed pr\u00e1\u0161ek do pe\u010diva, Wolfberry Bio Kyp\u0159\u00edc\u00ed pr\u00e1\u0161ek a Natural Jihlava Kyp\u0159\u00edc\u00ed pr\u00e1\u0161ek BIO,&#8221;<\/em> \u0159\u00edk\u00e1 Hana Hoffmannov\u00e1. Nejhor\u0161\u00ed, dostate\u010dn\u00e9 zn\u00e1mky padly u dvou pr\u00e1\u0161k\u016f za pouze 37 a 34procentn\u00ed n\u00e1r\u016fst v\u00fd\u0161ky.<\/p>\n<p>P\u0159esto\u017ee jsou aktu\u00e1ln\u011b \u201etrendy&#8221; sp\u00ed\u0161e pr\u00e1\u0161ky s vinn\u00fdm kamenem, v praktick\u00fdch testech obst\u00e1ly l\u00e9pe ty s fosfore\u010dnany a jedlou sodou. Fosfor pat\u0159\u00ed mezi biogenn\u00ed prvky a je d\u016fle\u017eit\u00fd t\u0159eba p\u0159i stavb\u011b kost\u00ed nebo zub\u016f. P\u0159irozen\u00e1 pot\u0159eba tohoto prvku se u dosp\u011bl\u00e9ho \u010dlov\u011bka pohybuje okolo p\u016fl gramu denn\u011b. Ze stravy ho v\u0161ak p\u0159ij\u00edm\u00e1me v pr\u016fm\u011bru asi dvojn\u00e1sobek, n\u011bkdy dokonce i v\u00edc, a to z p\u0159irozen\u00fdch zdroj\u016f, jako jsou nap\u0159\u00edklad vejce \u010di s\u00fdry. Fosfore\u010dnany jsou v\u0161ak v potravin\u00e1ch \u010dasto obsa\u017eeny ve form\u011b p\u0159\u00eddatn\u00fdch l\u00e1tek.<\/p>\n<p><em>\u201eZji\u0161\u0165ovali jsme proto, kolik fosforu kyp\u0159ic\u00ed pr\u00e1\u0161ky ukr\u00fdvaj\u00ed. U bezfosf\u00e1tov\u00fdch p\u0159\u00edpravk\u016f jsme t\u00edm z\u00e1rove\u0148 ov\u011b\u0159ili pravdivost jejich etiket. U klasick\u00fdch pr\u00e1\u0161k\u016f do pe\u010diva se obsah fosforu pohyboval od 5\u2009a\u017e po 12,5\u2009procent. U pr\u00e1\u0161k\u016f s vinn\u00fdm kamenem byl fosfor obsa\u017een tak\u00e9, ale ve sto a\u017e tis\u00edcin\u00e1sobn\u011b ni\u017e\u0161\u00edch koncentrac\u00edch odpov\u00eddaj\u00edc\u00edch p\u0159irozen\u00e9mu v\u00fdskytu,&#8221;<\/em> konstatuje Hana Hoffmannov\u00e1.<\/p>\n<p>Pr\u016fm\u011brn\u00e9 v\u00fdsledky uk\u00e1zaly, \u017ee klasick\u00e9 fosf\u00e1tov\u00e9 p\u0159\u00edpravky funguj\u00ed o trochu l\u00e9pe ne\u017e ty s vinn\u00fdm kamenem. Konec tabulek obsadily v\u00fdrobky, kter\u00fdm se p\u0159\u00edli\u0161 neda\u0159ilo v praktick\u00fdch zkou\u0161k\u00e1ch.<\/p>\n<p>Jak\u00fd je mezi fosfore\u010dnany a vinn\u00fdm kamenem rozd\u00edl? Fosfore\u010dnany jsou skupinou n\u011bkolika sol\u00ed kyseliny fosfore\u010dn\u00e9. Zaji\u0161\u0165uj\u00ed dostate\u010dn\u011b rychl\u00e9 uvol\u0148ov\u00e1n\u00ed oxidu uhli\u010dit\u00e9ho. Nev\u00fdhodou m\u016f\u017ee b\u00fdt to, \u017ee ve v\u00fdrobku zvy\u0161uj\u00ed obsah fosforu. Odborn\u00e1 literatura tak\u00e9 uv\u00e1d\u00ed, \u017ee difosfore\u010dnany maj\u00ed specifickou p\u0159\u00edchu\u0165, kterou mohou citliv\u011bj\u0161\u00ed lid\u00e9 vn\u00edmat.<\/p>\n<p>Vinn\u00fd k\u00e1men (sodn\u00e9 \u010di draseln\u00e9 soli kyseliny vinn\u00e9) v\u00fdrobci na obalech \u010dasto zd\u016fraz\u0148uj\u00ed. Aktu\u00e1ln\u011b se prosazuje p\u0159edev\u0161\u00edm v bio kyp\u0159ic\u00edch pr\u00e1\u0161c\u00edch, u kter\u00fdch je, stejn\u011b jako u v\u0161ech biopotravin \u2013 omezeno pou\u017eit\u00ed fosfore\u010dnan\u016f.<\/p>\n<p>Pr\u00e1\u0161ky do pe\u010diva nejsou p\u0159\u00edli\u0161 rizikov\u00e9, pokud v\u00fdrobci pou\u017e\u00edvaj\u00ed chemick\u00e9 kyp\u0159ic\u00ed l\u00e1tky v potravin\u00e1\u0159sk\u00e9 \u010distot\u011b. Ta je d\u00e1na hlavn\u011b obsahem t\u011b\u017ek\u00fdch kov\u016f. Laborato\u0159 zji\u0161\u0165ovala p\u0159\u00edtomnost osmi prvk\u016f \u2013 arsenu, kadmia, olova, chromu, m\u011bdi, kobaltu, niklu a rtuti.
