Inspekto\u0159i se mj. zam\u011b\u0159uj\u00ed na dodr\u017eov\u00e1n\u00ed bezpe\u010dnostn\u00edch a jakostn\u00edch parametr\u016f u kope\u010dkov\u00fdch i to\u010den\u00fdch zmrzlin a led\u016f do n\u00e1poj\u016f, a to v\u010detn\u011b kontrol za\u0159\u00edzen\u00ed na jejich p\u0159\u00edpravu. Kontroly inspekto\u0159i realizovali zejm\u00e9na v cukr\u00e1rn\u00e1ch a dal\u0161\u00edch\u00a0provozovn\u00e1ch spole\u010dn\u00e9ho stravov\u00e1n\u00ed.<\/h6>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-92155 size-full\" src=\"http:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2017\/02\/08\/potraviny-na-pran\u00fd\u0159i.jpg\" alt=\"\" width=\"330\" height=\"115\" srcset=\"https:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2017\/02\/08\/potraviny-na-pran\u00fd\u0159i.jpg 330w, https:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2017\/02\/08\/potraviny-na-pran\u00fd\u0159i-300x105.jpg 300w, https:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2017\/02\/08\/potraviny-na-pran\u00fd\u0159i-326x115.jpg 326w\" sizes=\"(max-width: 330px) 100vw, 330px\" \/>Pr\u016fb\u011b\u017en\u00e9 v\u00fdsledky kontrol v\u00a0leto\u0161n\u00ed sez\u00f3n\u011b ukazuj\u00ed, \u017ee \u0159ada provozovatel\u016f st\u00e1le nedodr\u017euje p\u0159edepsan\u00e9 v\u00fdrobn\u00ed postupy a v\u00fdznamn\u00e1 \u010d\u00e1st odebran\u00fdch vzork\u016f nesplnila po\u017eadavky pr\u00e1vn\u00edch p\u0159edpis\u016f zejm\u00e9na v\u00a0oblasti limit\u016f pro p\u0159\u00edtomnost bakteri\u00ed. V\u00a0obdob\u00ed do 31. 7. 2020 nevyhov\u011blo celkem 30 % vzork\u016f zmrzlin a t\u00e9m\u011b\u0159 43 % vzork\u016f led\u016f do n\u00e1poj\u016f.<\/p>\n<p>V\u00a0roce 2020 (do 31. 7. 2020) inspekto\u0159i SZPI dosud vyhodnotili 64 vzork\u016f to\u010den\u00fdch a kope\u010dkov\u00fdch zmrzlin a 19 z\u00a0nich (cca 30 %) nesplnilo hygienick\u00e9 limity. Ve vzorc\u00edch zmrzlin laboratorn\u00ed rozbory potvrdily nadlimitn\u00ed po\u010dty koloni\u00ed bakteri\u00ed \u010deledi Enterobacteriaceae. P\u0159i kontrol\u00e1ch v\u00a0roce 2019 nevyhov\u011blo po\u017eadavk\u016fm pr\u00e1vn\u00edch p\u0159edpis\u016f 37 % hodnocen\u00fdch vzork\u016f, v\u00a0roce 2018 \u0161lo o 30 % a v\u00a0roce 2017 o 26 %. Za hlavn\u00ed p\u0159\u00ed\u010dinu nevyhovuj\u00edc\u00edch v\u00fdsledk\u016f lze pova\u017eovat nedostate\u010dnou sanitaci za\u0159\u00edzen\u00ed na v\u00fdrobu zmrzlin a tak\u00e9 kontaminovan\u00e9 vstupn\u00ed suroviny, jejich\u017e hodnocen\u00ed provozovateli potravin\u00e1\u0159sk\u00fdch podnik\u016f spo\u010d\u00edv\u00e1 \u010dasto jen ve vizu\u00e1ln\u00ed kontrole. Roli m\u016f\u017ee hr\u00e1t i nedostate\u010dn\u00e9 pro\u0161kolen\u00ed person\u00e1lu. Jednou z charakteristick\u00fdch \u00a0p\u0159\u00ed\u010din probl\u00e9mu u to\u010den\u00fdch zmrzlin je ne\u017e\u00e1douc\u00ed praxe, kdy provozovatel\u00e9 zmrzlinu na konci dne nelikviduj\u00ed, ale n\u00e1sleduj\u00edc\u00ed den ji vrac\u00ed zp\u011bt do stroje, \u010d\u00edm\u017e m\u016f\u017ee doch\u00e1zet k\u00a0p\u0159en\u00e1\u0161en\u00ed bakteri\u00e1ln\u00ed kontaminace ze stroje na zmrzlinovou sm\u011bs a zp\u011bt.<\/p>\n<p>V\u00a0leto\u0161n\u00ed sez\u00f3n\u011b (op\u011bt do 31. 7. 2020) inspekto\u0159i SZPI dosud dokon\u010dili vyhodnocen\u00ed u 21 vzork\u016f led\u016f do n\u00e1poj\u016f a 9 z\u00a0nich (cca 43 %) nesplnilo zdravotn\u00ed nebo hygienick\u00e9 limity. Mezi sledovan\u00e9 parametry n\u00e1le\u017eel v\u00fdskyt bakteri\u00ed Escherichia coli, Clostridium perfringens, enterokok\u016f, koliformn\u00edch bakteri\u00ed a bakteri\u00e1ln\u00edch koloni\u00ed. P\u0159i kontrol\u00e1ch v\u00a0roce 2019 nevyhov\u011blo po\u017eadavk\u016fm pr\u00e1vn\u00edch p\u0159edpis\u016f 40 % hodnocen\u00fdch vzork\u016f, v\u00a0roce 2018 \u0161lo o 47 % a v\u00a0roce 2017 o 45 %. Za hlavn\u00ed p\u0159\u00ed\u010dinu nevyhovuj\u00edc\u00edch zji\u0161t\u011bn\u00ed lze ozna\u010dit podcen\u011bn\u00ed hygienick\u00e9 praxe p\u0159i v\u00fdrob\u011b ledu a pr\u016fb\u011b\u017en\u00e9 dezinfekce v\u00fdrobn\u00edk\u016f ledu.<\/p>\n<p>Z v\u00fdsledk\u016f leto\u0161n\u00edch kontrol i kontrol v\u00a0p\u0159edchoz\u00edch letech je z\u0159ejm\u00e9, \u017ee v\u00fdznamn\u00e1 \u010d\u00e1st provozovatel\u016f st\u00e1le hrub\u011b podce\u0148uje rizika spojen\u00e1 s nedodr\u017een\u00edm hygienick\u00fdch postup\u016f p\u0159i v\u00fdrob\u011b, skladov\u00e1n\u00ed a prodeji uveden\u00e9ho sortimentu a s\u00a0t\u00edm souvisej\u00edc\u00edm poru\u0161en\u00edm hygienick\u00fdch limit\u016f pro p\u0159\u00edtomnost mikroorganism\u016f. Pod\u00edl nevyhovuj\u00edc\u00edch vzork\u016f v\u0161ak nelze zev\u0161eobecnit pro cel\u00fd trh, proto\u017ee SZPI vyb\u00edr\u00e1 vzorky k\u00a0odb\u011bru dle sofistikovan\u00e9 anal\u00fdzy rizika a \u010dast\u011bji prov\u011b\u0159uje provozovny, kde o\u010dek\u00e1v\u00e1 probl\u00e9m. I bezprobl\u00e9mov\u00ed provozovatel\u00e9 jsou v\u0161ak kontrolov\u00e1ni, by\u0165 s\u00a0ni\u017e\u0161\u00ed frekvenc\u00ed.<\/p>\n<p>Po\u010dty dosud vyhodnocen\u00fdch vzork\u016f jsou ve srovn\u00e1n\u00ed s\u00a0p\u0159edchoz\u00edmi lety m\u00edrn\u011b ni\u017e\u0161\u00ed v\u00a0souvislosti s\u00a0pozd\u011bj\u0161\u00edm n\u00e1stupem prodejn\u00ed sez\u00f3ny.<\/p>\n<p>V\u00a0provozovn\u00e1ch, kde inspekto\u0159i SZPI odebrali nevyhovuj\u00edc\u00ed vzorky, na m\u00edst\u011b zak\u00e1zali u\u017e\u00edv\u00e1n\u00ed za\u0159\u00edzen\u00ed (nap\u0159. v\u00fdrobn\u00edku ledu, zmrzlinov\u00e9ho stroje a souvisej\u00edc\u00edho n\u00e1\u010din\u00ed), na\u0159\u00eddili provozovateli proveden\u00ed jeho sanitace a n\u00e1sledn\u00e9 proveden\u00ed mikrobiologick\u00e9ho rozboru akreditovanou laborato\u0159\u00ed.
