Spr\u00e1vnou chu\u0165 masu, s\u00fdr\u016fm nebo zelenin\u011b dod\u00e1v\u00e1 mimo jin\u00e9 ko\u0159en\u00ed. dTest proto podrobil zkoum\u00e1n\u00ed grilovac\u00ed ko\u0159enic\u00ed p\u0159\u00edpravky. Celkem 15 sm\u011bs\u00ed pro\u0161lo laboratorn\u00edm testem s c\u00edlem zjistit, jak jsou bezpe\u010dn\u00e9. V\u0161echny obst\u00e1ly bez probl\u00e9m\u016f, ov\u0161em \u010dasto jsou z v\u00edce ne\u017e poloviny pln\u00e9 soli.<\/h6>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-131630 alignright\" src=\"http:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2018\/05\/29\/logo-dtest-114x300.jpg\" alt=\"\" width=\"114\" height=\"300\" srcset=\"https:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2018\/05\/29\/logo-dtest-114x300.jpg 114w, https:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2018\/05\/29\/logo-dtest.jpg 126w\" sizes=\"(max-width: 114px) 100vw, 114px\" \/>Nen\u00ed ko\u0159en\u00ed jako ko\u0159en\u00ed.<em> \u201ePodle platn\u00e9 vyhl\u00e1\u0161ky se za ko\u0159en\u00ed pova\u017euj\u00ed rostliny \u010di jejich \u010d\u00e1sti, kter\u00e9 jednotliv\u011b ovliv\u0148uj\u00ed chu\u0165 a v\u016fni. Pokud balen\u00ed obsahuje v\u00edce takov\u00fdch rostlin, jde o sm\u011bs ko\u0159en\u00ed a pokud se p\u0159id\u00e1 je\u0161t\u011b n\u011bco na v\u00edc, nap\u0159. s\u016fl, vznikne ko\u0159enic\u00ed p\u0159\u00edpravek,\u201c<\/em> up\u0159es\u0148uje n\u00e1zvoslov\u00ed Hana Hoffmannov\u00e1, \u0161\u00e9fredaktorka \u010dasopisu dTest.<\/p>\n<p>Do v\u00fdb\u011bru pro test byly zahrnuty grilovac\u00ed ko\u0159enic\u00ed p\u0159\u00edpravky zn\u00e1m\u00fdch ko\u0159en\u00e1\u0159sk\u00fdch zna\u010dek, ale i priv\u00e1tn\u00ed zna\u010dky obchodn\u00edch \u0159et\u011bzc\u016f. Up\u0159ednostn\u011bny byly sm\u011bsi, kter\u00e9 jsou na pultech reg\u00e1l\u016f celoro\u010dn\u011b. Laborato\u0159 n\u00e1sledn\u011b ov\u011b\u0159ila, kolik p\u0159\u00edpravky obsahuj\u00ed soli a zkontrolovala jejich chemickou a mikrobi\u00e1ln\u00ed bezpe\u010dnost.<\/p>\n<p>Doporu\u010den\u00e1 maxim\u00e1ln\u00ed denn\u00ed d\u00e1vka soli pro dosp\u011bl\u00e9ho jedince je 6 g, \u010ce\u0161i v pr\u016fm\u011bru spo\u0159\u00e1daj\u00ed 13 g, co\u017e p\u0159edstavuje jednu z nejvy\u0161\u0161\u00edch hodnot spot\u0159eby soli v Evrop\u011b. V\u00fdznamnou roli zde hraj\u00ed tzv. skryt\u00e9 zdroje, tedy s\u016fl, kter\u00e1 je sou\u010d\u00e1st\u00ed potravin\u00e1\u0159sk\u00fdch v\u00fdrobk\u016f. Grilovac\u00ed ko\u0159enic\u00ed p\u0159\u00edpravky do t\u00e9to kategorie jednozna\u010dn\u011b pat\u0159\u00ed. Nejni\u017e\u0161\u00ed pod\u00edl se potvrdil u zna\u010dky Kulin\u00e1\u0159, kde bylo nam\u011b\u0159eno 17,7\u2009% soli. Nejvy\u0161\u0161\u00ed hodnotu 63,5\u2009% naopak obsahovalo grilovac\u00ed ko\u0159en\u00ed Vitana. <em>\u201eNadpolovi\u010dn\u00ed pod\u00edl soli anal\u00fdza potvrdila u v\u00edce ne\u017e poloviny v\u0161ech testovan\u00fdch p\u0159\u00edpravk\u016f. P\u0159i u\u017e\u00edv\u00e1n\u00ed ko\u0159enic\u00edch sm\u011bs\u00ed je proto pot\u0159eba b\u00fdt opatrn\u00fd s dosolov\u00e1n\u00edm,\u201c<\/em> \u0159\u00edk\u00e1 Hana Hoffmannov\u00e1.<\/p>\n<p>V konfrontaci nam\u011b\u0159en\u00fdch hodnot s \u00fadaji na etiket\u00e1ch v\u00fdrobky obst\u00e1ly. Nejl\u00e9pe si vedla sm\u011bs Nadir Grilovac\u00ed ko\u0159en\u00ed, kter\u00e1 deklarovala na obalu p\u0159esn\u00e9 mno\u017estv\u00ed soli. Ostatn\u00ed v\u00fdrobky se ve\u0161ly do \u00fa\u0159edn\u011b tolerovan\u00e9 p\u011btinov\u00e9 odchylky.<\/p>\n<p>Dal\u0161\u00ed \u010d\u00e1st testu zkoumala p\u0159\u00edtomnost bakterie salmonely a nebezpe\u010dn\u00fdch pl\u00edsn\u00ed produkuj\u00edc\u00edch jedovat\u00e9 l\u00e1tky. Sv\u011bd\u010dilo by to o nedokonal\u00e9m su\u0161en\u00ed surovin, nevhodn\u00e9m skladov\u00e1n\u00ed nebo nedostate\u010dn\u00e9 hygien\u011b. V tomto ohledu v\u0161ak m\u011bli v\u00fdrobci situaci pod kontrolou.<\/p>\n<p>Laborato\u0159 prov\u011b\u0159ila i p\u0159\u00edtomnost mykotoxin\u016f, tedy jedovat\u00fdch l\u00e1tek produkovan\u00fdch pl\u00edsn\u011bmi, kter\u00e9 mohly b\u00fdt v surovin\u011b d\u0159\u00edve p\u0159\u00edtomn\u00e9. Test se zam\u011b\u0159il na dv\u011b skupiny karcinogenn\u00edch l\u00e1tek: aflatoxiny, konkr\u00e9tn\u011b na pl\u00edsn\u011b rodu Aspergillus, kter\u00e9 po\u0161kozuj\u00ed zejm\u00e9na j\u00e1tra a na ochratoxin A, kter\u00fd oslabuje imunitu a ohro\u017euje v\u00fdvoj plodu. Ob\u011b sledovan\u00e9 l\u00e1tky jsou nav\u00edc odoln\u00e9 v\u016f\u010di teplot\u00e1m a ani na rozp\u00e1len\u00e9m grilu se jich tak nelze zbavit. Prvn\u00ed jmenovan\u00e1 skupina byla objevena v ko\u0159en\u00ed zna\u010dky Albert, ale ve velmi n\u00edzk\u00e9 koncentraci p\u0159edstavuj\u00edc\u00ed setinu povolen\u00e9ho limitu. Ochratoxin A byl zaznamen\u00e1n ve v\u0161ech produktech s v\u00fdjimkou zna\u010dky Opal. Maxim\u00e1ln\u00ed nam\u011b\u0159en\u00e1 hodnota l\u00e1tky \u010dinila polovinu povolen\u00e9ho limitu.<\/p>\n<p>Prov\u011b\u0159ovala se tak\u00e9 p\u0159\u00edtomnost 550 druh\u016f pesticid\u016f. I v t\u00e9to zkou\u0161ce grilovac\u00ed ko\u0159enic\u00ed p\u0159\u00edpravky obst\u00e1ly. Nejl\u00e9pe si vedlo ko\u0159en\u00ed zna\u010dky Diskont, kter\u00e9 neobsahovalo \u017e\u00e1dnou ze sledovan\u00fdch l\u00e1tek. Zbyl\u00e9 p\u0159\u00edpravky obsahovaly od jednoho a\u017e po deset druh\u016f nar\u00e1z. U \u017e\u00e1dn\u00e9ho v\u00fdrobku v\u0161ak nebylo zaznamen\u00e1no p\u0159ekro\u010den\u00ed povolen\u00fdch limit\u016f ani p\u0159\u00edtomnost nepovolen\u00fdch l\u00e1tek.<\/p>\n<p>Pokud jde o slo\u017een\u00ed ko\u0159en\u00ed, test potvrdil, \u017ee z 18 a\u017e 64 % byly p\u0159\u00edpravky tvo\u0159eny sol\u00ed, zbytek p\u0159edstavovala sm\u011bs ko\u0159en\u00ed a su\u0161en\u00e9 zeleniny. Testovan\u00e9 p\u0159\u00edpravky obsahovaly nejm\u00e9n\u011b \u010dty\u0159i druhy a spole\u010dn\u00fdm jmenovatelem v\u0161ech v\u00fdrobk\u016f byla paprika. Zbytek receptur byl zna\u010dn\u011b variabiln\u00ed. Rekordman, rumunsk\u00e1 zna\u010dka Opal, obsahovala rovn\u00fdch 15 druh\u016f ko\u0159en\u00ed a su\u0161en\u00e9 zeleniny. N\u011bkolik v\u00fdrobc\u016f p\u0159idalo do sm\u011bsi i cukr, nejv\u00edce ho bylo zji\u0161t\u011bno 23,4 % u p\u0159\u00edpravku zna\u010dky Opal.<\/p>\n<p><em>\u201ePokud jde o dal\u0161\u00ed ingredience, v\u011bt\u0161ina v\u00fdrobk\u016f se dok\u00e1zala obej\u00edt bez p\u0159\u00edsad zv\u00fdraz\u0148uj\u00edc\u00ed chu\u0165 a v\u016fni, jako je \u0161krob a aroma. P\u0159esto se na\u0161la trojice zna\u010dek, kter\u00e9 na etiket\u00e1ch avizovaly p\u0159\u00edtomnost pr\u00e1v\u011b t\u011bchto l\u00e1tek,\u201c<\/em> dod\u00e1v\u00e1 na z\u00e1v\u011br Hana Hoffmannov\u00e1.<\/p>\n<p>P\u0159ehled testovan\u00fdch grilovac\u00edch ko\u0159enic\u00edch p\u0159\u00edpravk\u016f najdete na webu <a href=\"https:\/\/www.dtest.cz\/grilovaci-koreni\" target=\"_blank\" rel=\"noopener\"><strong>https:\/\/www.dtest.cz\/grilovaci-koreni<\/strong><\/a>.
