Nechyb\u011blo ani senzorick\u00e9 hodnocen\u00ed a zkoum\u00e1n\u00ed mikrobiologick\u00e9 nez\u00e1vadnosti \u010di deklarac\u00ed uveden\u00fdch na obalech.<\/h6>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-123697 alignright\" src=\"http:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2018\/02\/22\/dtest-logo-112x300.jpg\" alt=\"\" width=\"112\" height=\"300\" srcset=\"https:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2018\/02\/22\/dtest-logo-112x300.jpg 112w, https:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2018\/02\/22\/dtest-logo.jpg 119w\" sizes=\"(max-width: 112px) 100vw, 112px\" \/>Do laborato\u0159e putovalo 15 \u010derstv\u00fdch a 10 trvanliv\u00fdch polotu\u010dn\u00fdch ml\u00e9k, a to jak \u010desk\u00fdch, tak slovensk\u00fdch a jednoho chorvatsk\u00e9ho. Krom\u011b b\u011b\u017en\u00fdch ml\u00e9k a priv\u00e1tn\u00edch zna\u010dek byla zastoupena i dv\u011b ozna\u010den\u00e1 jako \u201ebio\u201c.<\/p>\n<p><em>\u201eTest jsme odstartovali m\u011b\u0159en\u00edm tu\u010dnosti. Legislativa trv\u00e1 na tu\u010dnosti minim\u00e1ln\u011b 1,50\u2009% s p\u0159esnost\u00ed na setiny. Polovina ml\u00e9k v\u0161ak z\u016fstala p\u0159edepsan\u00e9mu minimu p\u00e1r setinek dlu\u017ena a hodnotu 1,50\u2009% a v\u00edce jsme zjistili jen u 12 z 25 vzork\u016f,<\/em>\u201c uv\u00e1d\u00ed Hana Hoffmannov\u00e1, \u0161\u00e9fredaktorka \u010dasopisu dTest. Nejni\u017e\u0161\u00ed tu\u010dnost laborato\u0159 zaznamenala u slovensk\u00e9ho v\u00fdrobku Tami Tatransk\u00e9 Bio mlieko.<\/p>\n<p>Stejn\u011b jako mno\u017estv\u00ed tuku jsou u ml\u00e9ka d\u016fle\u017eit\u00e9 i b\u00edlkoviny. Po\u017eadavk\u016fm na\u0159\u00edzen\u00ed, kter\u00e9 obsah b\u00edlkovin v ml\u00e9ce stanov\u00ed, v\u0161echny vzorky vyhov\u011bly. Nejvy\u0161\u0161\u00ed koncentrac\u00ed proteinu se mohlo pochlubit trvanliv\u00e9 Tesco Ml\u00e9ko UHT polotu\u010dn\u00e9.<\/p>\n<p>D\u00e1le posuzovatel\u00e9 hodnotili vzhled, konzistenci, chu\u0165 a v\u016fni. Zam\u011b\u0159ili se na jak\u00e9koliv zn\u00e1mky ne\u0161etrn\u00e9ho o\u0161et\u0159en\u00ed, ml\u00e9\u010dn\u00e9 usazeniny na dn\u011b a vady v konzistenci. P\u00e1trali i po ne\u017e\u00e1douc\u00ed naho\u0159kl\u00e9, slan\u00e9, trpk\u00e9 a s\u00fdrovit\u00e9 chuti. V\u0161echna ml\u00e9ka p\u0159ed p\u0159\u00edsn\u00fdmi po\u017eadavky obst\u00e1la. Nejlep\u0161\u00ed \u010derstv\u00e1 ml\u00e9ka ud\u011blala lep\u0161\u00ed dojem ne\u017e to nejlep\u0161\u00ed trvanliv\u00e9 \u2013 \u010derstv\u00e1 ml\u00e9ka odch\u00e1zela pr\u016fm\u011brn\u011b s 84\u2009%, trvanliv\u00e1 s 83\u2009%.<\/p>\n<p><em>\u201eOdhalen\u00ed nejv\u00fdrazn\u011bj\u0161\u00edch rozd\u00edl\u016f mezi \u010derstv\u00fdm a trvanliv\u00fdm ml\u00e9kem jsme si slibovali od mikrobiologick\u00e9ho rozboru. Je t\u0159eba up\u0159esnit, \u017ee i ml\u00e9ko nab\u00edzen\u00e9 jako \u010derstv\u00e9 proch\u00e1z\u00ed tepeln\u00fdm o\u0161et\u0159en\u00edm, kter\u00e9 v n\u011bm likviduje drtivou v\u011bt\u0161inu \u017eiv\u00fdch mikroorganism\u016f. U trvanliv\u00e9ho ml\u00e9ka se v\u0161ak pou\u017e\u00edv\u00e1 je\u0161t\u011b d\u016fkladn\u011bj\u0161\u00ed z\u00e1krok,\u201c<\/em> \u0159\u00edk\u00e1 Hana Hoffmannov\u00e1 a dod\u00e1v\u00e1:<em> \u201eU nadojen\u00e9ho syrov\u00e9ho ml\u00e9ka se celkov\u00fd po\u010det mikrob\u016f v mililitru m\u016f\u017ee pohybovat a\u017e okolo 50 000 organism\u016f. U n\u00e1mi testovan\u00fdch vzork\u016f trvanliv\u00e9ho ml\u00e9ka jsme ve v\u0161ech p\u0159\u00edpadech zjistili \u010distou nulu. U \u010derstv\u00fdch ml\u00e9k se pak shodn\u011b objevila hodnota men\u0161\u00ed ne\u017e 10. I takto mal\u00e9 os\u00eddlen\u00ed, p\u0159esto\u017ee je zcela ne\u0161kodn\u00e9, m\u00e1 velk\u00e9 d\u016fsledky \u2013 zat\u00edmco trvanliv\u00e9 ml\u00e9ko vydr\u017e\u00ed i n\u011bkolik m\u011bs\u00edc\u016f, \u010derstv\u00e9 jen asi 20 dn\u00ed.\u201c<\/em><\/p>\n<p>Ml\u00e9ko je nej\u010dast\u011bji spojov\u00e1no s obsahem v\u00e1pn\u00edku, a tak se dal\u0161\u00ed chemick\u00e9 rozbory zam\u011b\u0159ily pr\u00e1v\u011b na n\u011bj. Testovan\u00e1 ml\u00e9ka se od o\u010dek\u00e1van\u00e9 teoretick\u00e9 koncentrace v\u00e1pn\u00edku p\u0159\u00edli\u0161 neodch\u00fdlila. Nejni\u017e\u0161\u00ed hladinu dTest zjistil u trvanliv\u00e9ho ml\u00e9ka zna\u010dky Madeta, nejbohat\u0161\u00ed na v\u00e1pn\u00edk bylo \u010derstv\u00e9 ml\u00e9ko Milkin.<\/p>\n<p>Z\u00e1v\u011br testu pat\u0159il \u00fadaj\u016fm na obalech. <em>\u201eU ml\u00e9ka ozna\u010den\u00e9ho jako \u201ebio\u201c jsme si v\u0161\u00edmali certifik\u00e1t\u016f a ozna\u010den\u00ed p\u016fvodu. Po p\u016fvodu ml\u00e9ka jsme v\u0161ak p\u00e1trali i u ostatn\u00edch v\u00fdrobk\u016f. Tyto informace zat\u00edm nejsou povinn\u00e9, p\u0159esto jsme je na \u0159ad\u011b obal\u016f nalezli. Nej\u010dast\u011bji m\u011bly podobu loga \u010cesk\u00e1 potravina, kter\u00e9 u jednoslo\u017ekov\u00fdch potravin garantuje jejich 100% \u010deskou surovinu,\u201c<\/em> vysv\u011btluje Hana Hoffmannov\u00e1.<\/p>\n<p>V cel\u00e9m testu spolu dok\u00e1zalo \u010derstv\u00e9 i trvanliv\u00e9 ml\u00e9ko dr\u017eet krok. Nejv\u00fdznamn\u011bji se li\u0161ila zm\u00edn\u011bn\u00e1 mikrobiologick\u00e1 \u010distota. V\u00fdsledky senzorick\u00e9ho hodnocen\u00ed potvrdily, \u017ee \u010derstv\u00e9 ml\u00e9ko o n\u011bco l\u00e9pe chutn\u00e1. Trvanliv\u00e1 ml\u00e9ka m\u011bla \u010dast\u011bji pot\u00ed\u017ee s konzistenc\u00ed a lahodnost\u00ed chuti.
