Krom\u011b rostlinn\u00fdch jogurt\u016f \u010di ml\u00e9k si tak m\u016f\u017eeme vybrat i z pestr\u00e9 nab\u00eddky alternativ masn\u00fdch v\u00fdrobk\u016f. Spot\u0159ebitelsk\u00e1 organizace dTest poslala do laborato\u0159e jeden\u00e1ct \u201evege\u201c p\u00e1rk\u016f a burger\u016f. Testov\u00e1n\u00ed se zam\u011b\u0159ilo nejen na obsah \u017eivin a ne\u017e\u00e1douc\u00edch l\u00e1tek, ale v laboratorn\u00edch podm\u00ednk\u00e1ch se tak\u00e9 ochutn\u00e1valo. Nejsou to jen vegani a vegetari\u00e1ni, ale tak\u00e9 ti, kte\u0159\u00ed maso sice jed\u00ed, ale jeho spot\u0159ebu se sna\u017e\u00ed sni\u017eovat zejm\u00e9na s ohledem na n\u00e1ro\u010dnost jeho produkce.<\/p>\n<p>Zat\u00edmco je\u0161t\u011b ned\u00e1vno se rostlinn\u00e9 suroviny v uzenin\u00e1ch pou\u017e\u00edvaly jako lacin\u011bj\u0161\u00ed n\u00e1hra\u017eka masa, nyn\u00ed u speci\u00e1ln\u00edch v\u00fdrobk\u016f nahrazuj\u00ed s\u00f3ja, p\u0161enice nebo hr\u00e1ch maso \u00fapln\u011b.<em> \u201eRozhodn\u011b v\u0161ak nen\u00ed mo\u017en\u00e9 tvrdit, \u017ee by byly levn\u00e9. Naopak, bezmas\u00e9 p\u00e1rky jsou pr\u016fm\u011brn\u011b a\u017e o des\u00edtky korun na kilogram dra\u017e\u0161\u00ed ne\u017e ty s masem. Je\u0161t\u011b v\u011bt\u0161\u00ed cenov\u00e9 rozd\u00edly, a to a\u017e v \u0159\u00e1dech stokorun za kilo, jsou mezi masn\u00fdmi a bezmas\u00fdmi burgery,<\/em>\u201c uv\u00e1d\u00ed \u0161\u00e9fredaktorka \u010dasopisu dTest Hana Hoffmannov\u00e1.<\/p>\n<p>Samotn\u00e9 testov\u00e1n\u00ed se p\u0159\u00edli\u0161 neli\u0161ilo od toho, kter\u00e9 se prov\u00e1d\u00ed u masn\u00fdch v\u00fdrobk\u016f, kde je nejd\u016fle\u017eit\u011bj\u0161\u00ed zkou\u0161kou m\u011b\u0159en\u00ed obsahu masa. U rostlinn\u00fdch n\u00e1hra\u017eek dTest zji\u0161\u0165oval obsah b\u00edlkovin, kter\u00e9 poch\u00e1zely z nejr\u016fzn\u011bj\u0161\u00edch zdroj\u016f. U sedmi z nich to byla s\u00f3ja, \u010dasto dopln\u011bn\u00e1 o p\u0161enici. Pr\u00e1v\u011b kombinov\u00e1n\u00ed r\u016fzn\u00fdch zdroj\u016f rostlinn\u00fdch b\u00edlkovin je \u017e\u00e1douc\u00ed, proto\u017ee samotn\u00e9 pro \u010dlov\u011bka v\u011bt\u0161inou nejsou plnohodnotn\u00e9. Krom\u011b zm\u00edn\u011bn\u00e9 s\u00f3ji a p\u0161enice se v dal\u0161\u00edch testovan\u00fdch vzorc\u00edch objevily sm\u011bsi hrachu, brambor, \u010do\u010dky, quinoy \u010di kapusty. V n\u011bkter\u00fdch p\u0159\u00edpadech v\u0161ak figuroval i vaje\u010dn\u00fd b\u00edlek.<\/p>\n<p><em>\u201eP\u0159i hodnocen\u00ed mno\u017estv\u00ed b\u00edlkovin jsme si vzali na pomoc dostupn\u00e9 datab\u00e1ze v\u00fd\u017eivov\u00fdch hodnot i v\u00fdsledky na\u0161ich p\u0159ede\u0161l\u00fdch test\u016f. U p\u00e1rk\u016f jsme byli spokojeni, pokud obsah b\u00edlkovin neklesl pod 13 gram\u016f na sto gram\u016f v\u00fdrobku. V p\u0159\u00edpad\u011b burger\u016f to bylo 16 gram\u016f. V\u011bt\u0161ina v\u00fdrobk\u016f dok\u00e1zala s masit\u00fdm origin\u00e1lem dr\u017eet krok. Ni\u017e\u0161\u00ed hodnoty se objevily pouze ve t\u0159ech p\u0159\u00edpadech,\u201c<\/em> popisuje Hana Hoffmannov\u00e1.<\/p>\n<p>Nejni\u017e\u0161\u00ed obsah b\u00edlkovin, pouze 7,8 gram\u016f na sto gram\u016f, m\u011bly mra\u017een\u00e9 p\u00e1rky Ikea Korvmoj, a dostaly proto nedostate\u010dnou zn\u00e1mku. Mra\u017een\u00e9 burgery Linda McCartney\u2019s 2 Vegetarian 1\u20444 Lb Burgers m\u011bly, krom\u011b ni\u017e\u0161\u00edho obsahu b\u00edlkovin, probl\u00e9m i s p\u0159esnost\u00ed \u00fadaj\u016f na etiket\u011b. Vedle dostate\u010dn\u00e9 za obsah b\u00edlkovin si tak p\u0159ipsaly i p\u011btku za hodnocen\u00ed deklarace.<\/p>\n<p>Tu\u010dnost rostlinn\u00fdch konkurent\u016f masa zaji\u0161\u0165uj\u00ed r\u016fzn\u00e9 oleje, nej\u010dast\u011bji \u0159epkov\u00fd, slune\u010dnicov\u00fd nebo kokosov\u00fd. Nebylo p\u0159ekvapen\u00edm, \u017ee rostlinn\u00e9 uzeniny jsou v\u00fdrazn\u011b \u201elibov\u011bj\u0161\u00ed\u201c ne\u017e ty masit\u00e9. K pr\u016fm\u011brn\u00e9 tu\u010dnosti masn\u00fdch v\u00fdrobk\u016f s 20,4 gramy na sto gram\u016f se p\u0159ibl\u00ed\u017eil pouze Beyond Meat Beyond Burger, ostatn\u00ed v\u00fdrobky m\u011bly tuku mnohem m\u00e9n\u011b.<\/p>\n<p>P\u0159i ochutn\u00e1vce posuzovalo rozd\u00edly oproti masn\u00fdm v\u00fdrobk\u016fm osm hodnotitel\u016f. Sledovala se pevnost, konzistence nebo p\u0159\u00edtomnost zvl\u00e1\u0161tn\u00edch chut\u00ed a v\u016fn\u00ed, kter\u00e9 se v masn\u00fdch v\u00fdrobc\u00edch neobjevuj\u00ed. Jeliko\u017e \u0161lo o v\u00fdrobky pro vegany a vegetari\u00e1ny, zn\u00e1mkovalo se o n\u011bco m\u00edrn\u011bji. V\u00fdsledkem bylo sedm dostate\u010dn\u00fdch zn\u00e1mek, kter\u00e9 nazna\u010duj\u00ed, \u017ee podoba s masn\u00fdmi p\u0159edlohami je sp\u00ed\u0161e vzd\u00e1len\u00e1. Pot\u00ed\u017ee se objevily ve v\u0161ech sledovan\u00fdch parametrech krom\u011b vzhledu.<\/p>\n<p><em>\u201eNa prvn\u00ed pohled se rostlinn\u00e9 alternativy od masn\u00fdch v\u00fdrobk\u016f p\u0159\u00edli\u0161 neli\u0161ily, ale po nakrojen\u00ed a ochutn\u00e1n\u00ed byly rozd\u00edly jasn\u00e9. T\u00e9m\u011b\u0159 u v\u0161ech v\u00fdrobk\u016f si komise st\u011b\u017eovala na konzistenci, \u010dasto suchou a drobivou, a v t\u00e9to kategorii rozdala osm dostate\u010dn\u00fdch zn\u00e1mek. U chuti pak dokonce deset,\u201c<\/em> dod\u00e1v\u00e1 Hana Hoffmannov\u00e1. Nejm\u00e9n\u011b se p\u0159itom da\u0159ilo dvojici s\u00f3jov\u00fdch p\u00e1rk\u016f zna\u010dek Well Well a Kalma. Posuzovatel\u016fm na nich vadila nev\u00fdrazn\u00e1 v\u016fn\u011b a chu\u0165 i nep\u0159irozen\u011b gumovit\u00e1 konzistence. Z pozn\u00e1mek o p\u0159\u00edli\u0161n\u00e9 olejnatosti \u010di v\u00fdrazn\u00e9 ko\u0159en\u011bnosti lze vy\u010d\u00edst, \u017ee chut\u011b byly \u010dasto nevyv\u00e1\u017een\u00e9.<\/p>\n<p>Laborato\u0159 d\u00e1le zji\u0161\u0165ovala p\u0159\u00edtomnost v\u00edce ne\u017e 130 l\u00e1tek proti \u0161k\u016fdc\u016fm. Jedin\u00e9 reziduum bylo odhaleno pouze v burgerech Linda McCartney\u2019s. \u0160lo o herbicid fluazifop, jeho\u017e pou\u017eit\u00ed nen\u00ed v EU povoleno. Jeho koncentrace v\u0161ak byla natolik n\u00edzk\u00e1, \u017ee \u0161lo pravd\u011bpodobn\u011b o tzv. starou ekologickou z\u00e1t\u011b\u017e neboli historickou kontaminaci p\u016fdy. Proto si tyto burgery vyslou\u017eily uspokojivou zn\u00e1mku. Krom\u011b pesticid\u016f byly v hled\u00e1\u010dku i mikroorganismy, kter\u00e9 by mohly nazna\u010dit probl\u00e9my s kvalitou surovin a hygienou p\u0159i v\u00fdrob\u011b: kvasinky, pl\u00edsn\u011b a bakterie Escherichia coli a Listerie. Ani v jednom vzorku se v\u0161ak \u017e\u00e1dn\u00e9 z nich neobjevily.<\/p>\n<p>Kontrolou pro\u0161ly i etikety a s nimi tak\u00e9 p\u0159\u00edtomnost n\u011bkter\u00fdch p\u0159\u00eddatn\u00fdch l\u00e1tek. N\u011bkte\u0159\u00ed lid\u00e9 jsou p\u0159esv\u011bd\u010deni o tom, \u017ee rostlinn\u00e9 alternativy masa jsou pln\u00e9 \u00e9\u010dek, to ale z testu nevyplynulo. Nej\u010dast\u011bji v nich m\u016f\u017eeme naj\u00edt zahu\u0161\u0165ovadla, kter\u00e1 pom\u00e1haj\u00ed vytv\u00e1\u0159et po\u017eadovanou konzistenci. Rostlinn\u00e9 p\u00e1rky a karban\u00e1tky se pak spol\u00e9haj\u00ed na barvic\u00ed p\u0159\u00edsady. Byla mezi nimi \u201e\u00e9\u010dkov\u00e1\u201c barviva, ale i p\u0159\u00edrodn\u00ed barvic\u00ed extrakty, kter\u00e9 p\u0159eva\u017eovaly. Podobn\u011b to vypadalo s l\u00e1tkami zv\u00fdraz\u0148uj\u00edc\u00edmi chu\u0165. Pokud u\u017e k chu\u0165ov\u00e9mu zv\u00fdrazn\u011bn\u00ed do\u0161lo, pak jedin\u011b s kvasnicov\u00fdmi a b\u00edlkovinn\u00fdmi p\u0159\u00edpravky. Posledn\u00ed sledovanou skupinu vylep\u0161ovadel p\u0159edstavovala aromata. Ta se objevila u sedmi v\u00fdrobk\u016f. Nejvy\u0161\u0161\u00ed po\u010det zlep\u0161uj\u00edc\u00edch l\u00e1tek najednou uv\u00e1d\u011bly etikety burger\u016f zna\u010dek Linda McCartney\u2019s a Kaufland\/Take It Veggie.<\/p>\n<p>dTest nezapomn\u011bl ani na marketingov\u00e9 texty uv\u00e1d\u011bn\u00e9 na obalu. Pozastavil se pouze u p\u00e1rk\u016f spole\u010dnosti Kalma, kde se na obale uv\u00e1d\u00ed, \u017ee jsou bez cholesterolu.
