Spot\u0159ebitelsk\u00fd \u010dasopis dTest poslal do laborato\u0159e 26 \u010desk\u00fdch z\u00e1stupc\u016f tohoto pivn\u00edho stylu, aby prov\u011b\u0159il jejich kvalitu. Laborato\u0159 ov\u011b\u0159ovala, jestli neobsahuj\u00ed pl\u00edsn\u011b \u010di pesticidy i to, zda se v jejich chuti a v\u016fni neobjevuj\u00ed ne\u017e\u00e1douc\u00ed vady. Krit\u00e9rii v\u00fdb\u011bru byly tak\u00e9 velikost produkce pivovaru a region\u00e1ln\u00ed zastoupen\u00ed,\u201c<\/em> \u0159\u00edk\u00e1 Hana Hoffmannov\u00e1, \u0161\u00e9fredaktorka \u010dasopisu dTest.<\/p>\n<p>Vybran\u00e1 skupina 26 jeden\u00e1ctek a dvan\u00e1ctek putovala do laborato\u0159e, kde odborn\u00edci nejprve zji\u0161\u0165ovali, jak jsou na tom le\u017e\u00e1ky s obsahem \u0161kodliv\u00fdch l\u00e1tek. Konkr\u00e9tn\u011b pesticid\u016f a mykotoxin\u016f, co\u017e jsou zdrav\u00ed \u0161kodliv\u00e9 l\u00e1tky vznikaj\u00edc\u00ed p\u0159i napaden\u00ed surovin pro v\u00fdrobu piva pl\u00edsn\u011bmi.<\/p>\n<p><em>\u201eV tomto sm\u011bru m\u00e1me dobr\u00e9 zpr\u00e1vy. Mykotoxiny se v pivech nena\u0161ly bu\u010f v\u016fbec, nebo pouze v relativn\u011b n\u00edzk\u00fdch koncentrac\u00edch. Laborato\u0159 nedetekovala ani posledn\u00ed dobou hojn\u011b diskutovan\u00fd pesticid glyfos\u00e1t, kter\u00fd je podez\u0159el\u00fd z karcinogenn\u00edch \u00fa\u010dink\u016f a v \u010desk\u00e9 krajin\u011b se rozs\u00e1hle pou\u017e\u00edv\u00e1, d\u0159\u00edve i nadu\u017e\u00edval,\u201c<\/em> konstatuje Hoffmannov\u00e1.<\/p>\n<p>V dal\u0161\u00edm bloku zkou\u0161ek se hodnotitel\u00e9 zaj\u00edmali o kvalitu piva: zji\u0161\u0165ovali z\u00e1kladn\u00ed pivovarnick\u00e9 parametry, tedy mno\u017estv\u00ed extraktu p\u016fvodn\u00ed mladiny a obsah alkoholu. \u00dadaj o extraktu p\u016fvodn\u00ed mladiny (EPM) je v podstat\u011b tot\u00e9\u017e co stup\u0148ovitost piva. Jedn\u00e1 se o pod\u00edl l\u00e1tek extrahovan\u00fdch ze sladu a chmele do mladiny \u2013 v\u00fdrobn\u00edho mezistupn\u011b, jeho\u017e prokva\u0161en\u00edm vznik\u00e1 pivo.<\/p>\n<p><em>\u201e\u00dadaj o procentu\u00e1ln\u00edm pod\u00edlu EPM nen\u00ed povinn\u00fd, proto jej na v\u0161ech etiket\u00e1ch nenajdete. Vyhl\u00e1\u0161ka \u010d. 248\/2018 Sb., kter\u00e1 se kvalitou piva zab\u00fdv\u00e1, \u0159\u00edk\u00e1, \u017ee u le\u017e\u00e1ku se mus\u00ed EPM pohybovat od 11 do 12,9\u2009%. Mno\u017estv\u00ed extraktu ovliv\u0148uje plnost chuti piva a p\u0159i vy\u0161\u0161\u00edm obsahu EPM tak\u00e9 mohou kvasnice vytvo\u0159it v\u00edce alkoholu,\u201c<\/em> vysv\u011btluje Hoffmannov\u00e1 a dod\u00e1v\u00e1: <em>\u201eV\u0161echny le\u017e\u00e1ky vyhl\u00e1\u0161ce vyhov\u011bly. Nam\u011b\u0159en\u00e9 hodnoty se pohybovaly od 11,1\u2009% (Platan 11) a\u017e po 12,5\u2009% (Bernard sv\u011btl\u00fd le\u017e\u00e1k). Dobrou zpr\u00e1vou je i to, \u017ee jsme nenarazili na jedin\u00fd p\u0159\u00edpad, kdy by se \u00fadaj na etiket\u011b rozch\u00e1zel s realitou.\u201c<\/em><\/p>\n<p>V testovan\u00fdch le\u017e\u00e1c\u00edch laborato\u0159 nam\u011b\u0159ila od 4,4\u2009% (Platan 11 a Plze\u0148sk\u00fd Prazdroj Pilsner Urquell) do 5,3\u2009% alkoholu (Budweiser Budvar B:Original). Obsah alkoholu se uv\u00e1d\u00ed v objemov\u00fdch procentech, ov\u0161em doporu\u010den\u00ed t\u00fdkaj\u00edc\u00ed se spot\u0159eby alkoholu obvykle pracuj\u00ed s jeho hmotnost\u00ed. V pr\u016fm\u011bru byste m\u011bli v p\u016fllitru le\u017e\u00e1ku po\u010d\u00edtat s 19,2\u2009g alkoholu. Kdyby toto mno\u017estv\u00ed vypil pr\u016fm\u011brn\u00fd 85kg mu\u017e, odboural by ho za dv\u011b a \u010dtvrt hodiny. U 60kg \u017eeny by tot\u00e9\u017e trvalo \u010dty\u0159i hodiny. Podle WHO by ale \u017eeny nem\u011bly p\u0159ijmout v\u00edce ne\u017e 16\u2009g alkoholu denn\u011b.<\/p>\n<p>Na z\u00e1v\u011br piva putovala p\u0159ed panel odborn\u00edk\u016f, kte\u0159\u00ed je ochutnali. <em>\u201eNe\u0159ekneme v\u00e1m, kter\u00e9 pivo v\u00e1m bude nejv\u00edce chutnat, to je velmi individu\u00e1ln\u00ed v\u011bc. Komisi odborn\u00edk\u016f jsme ale po\u017e\u00e1dali o posouzen\u00ed, jak moc se chu\u0165, vzhled a v\u016fn\u011b testovan\u00fdch piv bl\u00ed\u017e\u00ed charakteristik\u00e1m pivn\u00edho stylu sv\u011btl\u00fd le\u017e\u00e1k \u010desk\u00e9ho typu,\u201c<\/em> p\u0159edes\u00edl\u00e1 Hana Hoffmannov\u00e1.<\/p>\n<p>Za ka\u017ed\u00fdm pivn\u00edm stylem toti\u017e stoj\u00ed specifick\u00fd zp\u016fsob v\u00fdroby a speci\u00e1ln\u00ed suroviny, co\u017e d\u00e1v\u00e1 styl\u016fm jedine\u010dn\u00fd charakter. N\u00e1\u0161 sv\u011btl\u00fd le\u017e\u00e1k se va\u0159\u00ed od roku 1842. Krom\u011b je\u010dn\u00e9ho sladu a \u017eateck\u00e9ho chmele je pro n\u011bj typick\u00e9 tzv. spodn\u00ed kva\u0161en\u00ed. Od \u010desk\u00e9ho le\u017e\u00e1ku se o\u010dek\u00e1v\u00e1 v\u00fdrazn\u00e1 ho\u0159kost, dobr\u00e1 p\u011bnivost, plnost a pivo by m\u011blo b\u00fdt tzv. dob\u0159e piteln\u00e9. Ve v\u016fni le\u017e\u00e1ku by se m\u011bl projevovat slad, mo\u017en\u00e9 jsou i bylinn\u00e9 t\u00f3ny \u010di lehk\u00e1 esterov\u00e1 a diacetylov\u00e1 v\u016fn\u011b. Chu\u0165 v sob\u011b zahrnuje slad, ho\u0159kost a ko\u0159en\u011bnost danou pou\u017eit\u00fdm chmelem.<\/p>\n<p>Nejv\u00edce bod\u016f v senzorick\u00e9m hodnocen\u00ed (92\u2009%) posb\u00edral Staropramen Exportn\u00ed le\u017e\u00e1k, o procentn\u00ed bod m\u00e9n\u011b pak z\u00edskala Holba \u0160er\u00e1k.<em> \u201eVelmi dobr\u00e9 senzorick\u00e9 hodnocen\u00ed s v\u00fdsledkem mezi 80 a 90\u2009% si odneslo je\u0161t\u011b p\u011bt vzork\u016f: Zubr Grand 11, Kozel 11, Plze\u0148sk\u00fd Prazdroj Pilsner Urquell, \u017datec Premium a B\u0159ez\u0148\u00e1k Le\u017e\u00e1k ze star\u00e9 \u0161koly, kter\u00fdm se rovn\u011b\u017e vyhnuly v\u00fdrazn\u00e9 vady,\u201c<\/em> uv\u00e1d\u00ed Hana Hoffmannov\u00e1. S pouze dostate\u010dn\u00fdm senzorick\u00fdm hodnocen\u00edm skon\u010dil jen jedin\u00fd vzorek: Je\u017eek 11\u2009%.
