Pod pojmem \u201elidov\u00e1 strava\u201c rozum\u00edme pokrmy a n\u00e1poje p\u0159ipravovan\u00e9 a konzumovan\u00e9 ve vesnick\u00e9m prost\u0159ed\u00ed zem\u011bd\u011blci i drobn\u00fdmi \u0159emesln\u00edky, v m\u011bstsk\u00e9m prost\u0159ed\u00ed pak d\u011blnick\u00fdmi vrstvami zhruba do poloviny 20.stolet\u00ed.<\/h6>\n<p>Od konce 2. sv\u011btov\u00e9 v\u00e1lky vn\u00edm\u00e1me lidovou stravu jako jev se spole\u010dn\u00fdmi znaky bez rozd\u00edlu prost\u0159ed\u00ed. V minulosti m\u011bl rozhoduj\u00edc\u00ed vliv na charakter lidov\u00e9 stravy zp\u016fsob z\u00edsk\u00e1v\u00e1n\u00ed surovin, jejich sortiment, dostupnost a mo\u017enosti uchov\u00e1n\u00ed pro p\u0159\u00edpravu j\u00eddel pro v\u0161edn\u00ed i sv\u00e1te\u010dn\u00ed p\u0159\u00edle\u017eitosti. Venkovsk\u00e9 obyvatelstvo bylo z\u00e1visl\u00e9 na tom, co se vyp\u011bstovalo na pol\u00edch a v hospod\u00e1\u0159stv\u00ed. Drobn\u00ed m\u011bst\u0161t\u00ed \u0159emesln\u00edci a posl\u00e9ze d\u011blnick\u00e9 rodiny ve m\u011bstech suroviny na p\u0159\u00edpravu pokrm\u016f kupovali na trz\u00edch, postupn\u011b ve specializovan\u00fdch obchodech.<\/p>\n<p>Doklady o tom, jakou skladbu m\u011bl v\u0161edn\u00ed a sv\u00e1te\u010dn\u00ed j\u00eddeln\u00ed\u010dek od konce 18.stolet\u00ed poskytuj\u00ed dobov\u00e9 prameny, memo\u00e1ry, kroniky, historick\u00e9 prameny, pozd\u011bji publikovan\u00e9 z\u00e1znamy lidopisn\u00fdch pracovn\u00edk\u016f. Od po\u010d\u00e1tku 20.stolet\u00ed mohou jako druhotn\u00e9 doklady slou\u017eit z\u00e1znamy o p\u0159\u00edprav\u011b j\u00eddel k v\u00fdznamn\u00fdm p\u0159\u00edle\u017eitostem, zapisovan\u00e9 neprofesion\u00e1ln\u00edmi kucha\u0159kami, zvan\u00fdmi do rodin a ti\u0161t\u011bn\u00e9 kucha\u0159ky, vyd\u00e1van\u00e9 od poloviny 19.stolet\u00ed.<\/p>\n<p>Chodsk\u00e9 hospodyn\u011b va\u0159\u00edvaly z toho, co jim dala zahrada a pole \u2013 p\u0159edev\u0161\u00edm z brambor, zel\u00ed, hub, ovoce a hrachu. Hr\u00e1ch um\u011bly p\u0159ipravovat na mnoho zp\u016fsob\u016f, ale v ka\u017ed\u00e9 chalup\u011b se z n\u011bj nab\u00edzel tzv. p\u00e1lenec. V \u017e\u00e1dn\u00e9 dom\u00e1cnosti tak\u00e9 nesm\u011bl chyb\u011bt kame\u0148\u00e1k s kysan\u00fdm zel\u00edm. To bylo nejenom zdrojem vitam\u00edn\u016f, ale tak\u00e9 v\u0161el\u00e9kem na v\u0161echny vnit\u0159n\u00ed neduhy a kocovinu. P\u0159edev\u0161\u00edm se ale zel\u00ed vyu\u017e\u00edvalo jako nezbytn\u00e1 surovina pro \u0159adu v\u00fdborn\u00fdch pokrm\u016f. K t\u011bm nejobvyklej\u0161\u00edm pat\u0159ily zeln\u00e9 placky.<\/p>\n<p>Co pat\u0159\u00ed k Chod\u016fm stejn\u011b jako \u010dakan, je chodsk\u00fd kol\u00e1\u010d. Ten tradi\u010dn\u00ed m\u00e1 dv\u011b podoby, kter\u00e9 se od sebe odli\u0161uj\u00ed zdoben\u00edm. V Mr\u00e1kov\u011b a okol\u00ed se pe\u010de tzv. dolsk\u00fd z doln\u00edho Chodska. Na n\u011bj se rozt\u00edr\u00e1 tvarohov\u00e1 n\u00e1divka po cel\u00e9 plo\u0161e a na ni se pak tence pomoc\u00ed zdob\u00edc\u00edch s\u00e1\u010dk\u016f tvo\u0159\u00ed ornamenty z makov\u00e9 a povidlov\u00e9 n\u00e1divky.<\/p>\n<p>Mezi tradi\u010dn\u00ed pokrmy Chodska a p\u0159ilehl\u00e9ho \u00fazem\u00ed v Bavorsku pat\u0159\u00ed bac\u00e1n, kucmoch, to\u010d, b\u00e1\u010d, \u0161lej\u0161ky, p\u00e1lenec, st\u00e1nky \u010di malto\u0161ny. Velmi \u010dasto to jsou jednoduch\u00e1 v\u0161edn\u00ed j\u00eddla, jejich\u017e z\u00e1klad tvo\u0159\u00ed brambory, kysel\u00e9 ml\u00e9ko, kysel\u00e1 smetana, kysel\u00e9 zel\u00ed, n\u011bkdy vylep\u0161en\u00e9 \u0161pekem nebo slaninou.<\/p>\n<p>Co se va\u0159ilo na Chodsku v jednotliv\u00fdch dnech:<\/p>\n<p><em>,,V pond\u011bl\u00ed to byly bandury se \u0161lupkama va\u0159en\u00fd, na to se osv\u011bd\u010dily flek\u00e1\u010de a \u017eampiony, popelky rozmar\u00fdny sou na chu\u0165 e\u0161t\u011b fajnov\u011bj\u0161\u00ed, tak ty se jely v ned\u011bli, a hdy\u017e k n\u00e1m n\u011bhdo p\u0159i\u0161el, v outer\u00fd sme semizd\u00e1 \u010f\u00e1ly Sejkory, ty byly zas nejlep\u010d\u00ed z b\u00f3n\u016f a r\u016f\u017e\u00e1k\u016f, t\u011bch mus\u00edte opravdu zas\u00e1zet kale, proto\u017ee s \u010derven\u00fdm z\u00e9l\u00edm je to opravdu fajnov\u00fd j\u00eddlo. V p\u00e1tek sme m\u011bli kucmoch, ten je nejlep\u010d\u00ed ze \u017elutejch \u017eampi\u00f3n\u016f. V sobotu se d\u011bl\u00e1 \u017eid se \u0161kvarkama z velkejch ma\u010farek, ten se moch j\u00edst i studenej, v n\u011bd\u011bli pak byla k vob\u011bdu k\u0159enouka s r\u016f\u017eovejma rohl\u00ed\u010dkama, ker\u00fd byly p\u0159ekopnut\u00fd a nikdo je necht\u011bl na terhu koupit.\u201c<\/em><\/p>\n<p>Nejjednodu\u0161\u0161\u00ed p\u0159\u00edpravou bylo va\u0159en\u00ed brambor ve slupce (v mund\u00faru). Uva\u0159en\u00e9 se pak na stole loupaly, solily a zap\u00edjely ml\u00e9kem nebo podm\u00e1sl\u00edm. Kdy\u017e se na takov\u00e9 brambory p\u0159idala cibulov\u00e1 j\u00ed\u0161ka, \u0159\u00edkalo se jim zaj\u00ed\u0161en\u00e9. \u0158ada pokrm\u016f m\u011bla n\u00e1zev podle toho, jak se s bramborami po uva\u0159en\u00ed zach\u00e1zelo. Tak se jedly brambory ma\u010dkan\u00e9 \u010di \u0161\u0165ouchan\u00e9 (klof\u00e1nky). Obl\u00edben\u00e1 lepenice jsou brambory s kysan\u00fdm zel\u00edm a cibulkou, h\u00e1zidlo p\u0159es bidlo byly brambory s noky oma\u0161t\u011bn\u00e9 \u0161kvarky.<\/p>\n<p>Chodsk\u00e9 hospodyn\u011b rovn\u011b\u017e z brambor p\u0159ipravovaly skv\u011bl\u00e9 t\u011bsto a z n\u011bj pak \u0161lej\u0161ky, \u0161ulance, sl\u00ed\u017ee, \u010di\u010d\u00e1nky apod. Ne tak \u010dasto se z t\u011bsta va\u0159ily knedl\u00edky. Ty se pod\u00e1valy jako samostatn\u00fd pokrm, mastily se s\u00e1dlem se sma\u017eenou cibulkou a jedlo se k nim sladk\u00e9 \u010di slan\u00e9 zel\u00ed. D\u016fle\u017eit\u00e9 byly i placky. Pekly se na plotn\u011b i v troub\u011b. Sypaly se m\u00e1kem, pol\u00e9valy medem, m\u00e1slem. A je\u0161t\u011b mus\u00edme zm\u00ednit brambory pe\u010den\u00e9 v troub\u011b nebo v popelu (pe\u010d\u00e1ky, pe\u010denky, pukance) a bramborovou ka\u0161i, tzv. kucmouch.
