I takov\u00e9 informace se ve Staropra\u017esk\u00e9 kucha\u0159ce objevuj\u00ed.<\/p>\n<p>Kniha, kter\u00e1 nen\u00ed ani tak klasickou kucha\u0159kou, jako sp\u00ed\u0161 milou kuriozitou, vych\u00e1z\u00ed v \u010de\u0161tin\u011b, angli\u010dtin\u011b, francouz\u0161tin\u011b, \u0161pan\u011bl\u0161tin\u011b, n\u011bm\u010din\u011b a ru\u0161tin\u011b, a m\u016f\u017ee tak pot\u011b\u0161it jako netradi\u010dn\u00ed d\u00e1rek z \u010cech.<\/p>\n<p>Staropra\u017esk\u00e9\u0301 speciality maj\u00ed p\u016fvod v druh\u00e9\u0301 polovin\u011b 19. stolet\u00ed, kdy se rozv\u00edjely velk\u00e9\u0301 hostince, hosp\u016fdky, ale i vin\u00e1rny a hotely. Spolu s nimi vznikala tak\u00e9\u0301 j\u00eddla jako pra\u017esk\u00e1\u0301 \u0161unka, p\u00e1rky a ostatn\u00ed uzen\u00e1\u0159sk\u00e9\u0301 v\u00fdrobky, ke kter\u00fdm se pod\u00e1valy r\u016fzn\u00e9\u0301 dopl\u0148ky a om\u00e1\u010dky &#8211; nap\u0159\u00edklad smetanov\u00fd\u0301 k\u0159en \u010di \u0161vestkov\u00e1\u0301 om\u00e1\u010dka. Tradi\u010dn\u00ed pokrmy se snoubily s ur\u010ditou kulturn\u00ed vyt\u0159\u00edbenost\u00ed t\u00e9 doby.<\/p>\n<p><strong>Zaj\u00edmavosti ze staropra\u017esk\u00fdch kuchyn\u00ed:<\/strong><\/p>\n<p>&#8211; Ve v\u011bt\u0161in\u011b dobov\u00fdch hospod bylo b\u011b\u017en\u00e9, \u017ee host\u00e9 si k pivu donesli ve\u010de\u0159i od uzen\u00e1\u0159e. Ti nab\u00edzeli novinku: tepl\u00e9 p\u00e1rky a vu\u0159ty &#8220;koulov\u00e1ky&#8221;. Standardn\u00ed nab\u00eddka hospodsk\u00fdch j\u00eddel b\u00fdvala v\u011bt\u0161inou jen studen\u00e1: uzen\u00e9\u0301 maso, vu\u0159ty, tla\u010denka s cibul\u00ed \u010di syre\u010dky. N\u011bkdy po\u010d\u00e1tkem stolet\u00ed se objevuj\u00ed i &#8220;utopenci&#8221;.<\/p>\n<p>&#8211; V \u0159\u00e1du ka\u017ed\u00e9ho pra\u017esk\u00e9ho tr\u017ei\u0161t\u011b byl uveden p\u0159esn\u00fd\u0301 soupis v\u0161ech hub, kter\u00e9\u0301 se tu mohly prod\u00e1vat. Nab\u00edzet se mohly jen houby mlad\u00e9\u0301, nerozkr\u00e1jen\u00e9\u0301, nejv\u00fd\u0161e p\u0159ekrojen\u00e9\u0301. Nesm\u011bly b\u00fdt okr\u00e1jen\u00e9\u0301 tak, \u017ee by nebyla poznat jejich podoba.<\/p>\n<p>&#8211; \u010cokol\u00e1da v \u010cech\u00e1ch m\u011bla punc luxusu. Zato k\u00e1va zdom\u00e1cn\u011bla pom\u011brn\u011b rychle. Ale vzhledem k tomu, \u017ee k\u00e1va byla p\u0159eci jenom relativn\u011b drahou z\u00e1le\u017eitost\u00ed, paraleln\u011b s jej\u00edm roz\u0161\u00ed\u0159en\u00edm byla patrn\u00e1 snaha o vypracov\u00e1n\u00ed receptur k\u00e1vovinov\u00fdch n\u00e1hra\u017eek. Ty se d\u011blaly z hrachu, dokonce i ze \u017ealud\u016f nebo z f\u00edk\u016f. A\u017e pak se p\u0159i\u0161lo na to, \u017ee kdy\u017e se su\u0161\u00ed a pra\u017e\u00ed \u010dekankov\u00e9\u0301 ko\u0159eny, vznik\u00e1\u0301 z nich k\u00e1vovinov\u00e1\u0301 n\u00e1hra\u017eka, kter\u00e9\u0301 se za\u010dalo \u0159\u00edkat cikorie. Cikorka se rychle ujala a tento vyn\u00e1lez postupn\u011b zatla\u010dil zrnkovou k\u00e1vu do pozice luxusn\u00edho n\u00e1poje. \u010caj byl dlouho vn\u00edm\u00e1n jako n\u011bco, co se pije sp\u00ed\u0161e ze zdravotn\u00edch d\u016fvod\u016f, a v oblib\u011b moc nebyl.
