Kdy\u017e se dvojit\u00e9 vazby v mono- nebo polynenasycen\u00fdch tuc\u00edch rozpadaj\u00ed, mastn\u00e1 kyselina proch\u00e1z\u00ed procesem naz\u00fdvan\u00fdm oxidace.<\/p>\n<p class=\"p1\">Pro\u010d jsou oxidovan\u00e9 tuky \u0161patn\u00e9? Stru\u010dn\u011b \u0159e\u010deno, oxidovan\u00e9 tuky = voln\u00e9 radik\u00e1ly. Voln\u00e9 radik\u00e1ly = po\u0161kozen\u00ed bun\u011bk. Zat\u00edmco nevyhnuteln\u011b m\u00e1me v na\u0161em t\u011ble voln\u00e9 radik\u00e1ly, m\u011bli bychom co nejv\u00edce tyto \u0161kodliv\u00e9 molekuly minimalizovat, abychom ochr\u00e1nili zdrav\u00ed a sn\u00ed\u017eili z\u00e1n\u011bt.<\/p>\n<p class=\"p1\">Podle Mary Eniga, autora Know Your Fats, s\u00e1dlo je typicky 40% nasycen\u00fdch tuk\u016f, 50% mononenasycen\u00fdch tuk\u016f a 10% polynenasycen\u00fdch tuk\u016f. Procento nasycen\u00fdch tuk\u016f v s\u00e1dle chr\u00e1n\u00ed zraniteln\u011bj\u0161\u00ed mono \/ polynenasycen\u00e9 tuky p\u0159ed oxidac\u00ed teplem, co\u017e \u010din\u00ed s\u00e1dlo vynikaj\u00edc\u00ed volbu pro va\u0159en\u00ed a pe\u010den\u00ed.<\/p>\n<h6 class=\"p1\">2. S\u00e1dlo je zdrav\u00e9 pro srdce<\/h6>\n<p class=\"p1\">\u201eS\u00e1dlo je \u017eivo\u010di\u0161n\u00fd tuk a m\u00e1 vysok\u00fd obsah nasycen\u00fdch tuk\u016f a cholesterolu. Neznamen\u00e1 to v\u0161ak, \u017ee to zvy\u0161uje riziko srde\u010dn\u00edch onemocn\u011bn\u00ed? \u201eV\u0161estrann\u00fd m\u00fdtus, \u017ee \u017eivo\u010di\u0161n\u00e9 tuky zvy\u0161uj\u00ed riziko srde\u010dn\u00edch onemocn\u011bn\u00ed, je to jen m\u00fdtus. Na\u0161i pra-praprarodi\u010di konzumovali s\u00e1dlo a m\u00e1slo a za\u017eili extr\u00e9mn\u011b n\u00edzk\u00e9 m\u00edry srde\u010dn\u00edch chorob. Po 8 letech nebyl rozd\u00edl v rychlosti srde\u010dn\u00edch onemocn\u011bn\u00ed nebo rakoviny mezi skupinami.<\/p>\n<p class=\"p1\">Mnoho dal\u0161\u00edch velk\u00fdch studi\u00ed nenalezlo \u017e\u00e1dn\u00fd p\u0159\u00ednos pro stravu s n\u00edzk\u00fdm obsahem tuku.<\/p>\n<p class=\"p1\">\u0158editel velk\u00e9 studie Framingham Heart dosp\u011bl k z\u00e1v\u011bru: \u201eZjistili jsme, \u017ee lid\u00e9, kte\u0159\u00ed konzumovali nejv\u00edce cholesterolu, jedli nejv\u00edce nasycen\u00fd tuk, jedli nejv\u00edce kalori\u00ed, v\u00e1\u017eili nejm\u00e9n\u011b a byli nejv\u00edce fyzicky aktivn\u00ed.\u201c<\/p>\n<p class=\"p1\">P\u0159\u00edjem nasycen\u00fdch tuk\u016f zvy\u0161uje HDL cholesterol, kter\u00fd je spojen se sn\u00ed\u017een\u00fdm rizikem srde\u010dn\u00edch onemocn\u011bn\u00ed.<\/p>\n<p class=\"p1\">\u201eOnemocn\u011bn\u00ed modern\u00ed civilizace\u201c v\u010detn\u011b onemocn\u011bn\u00ed srdce a cukrovky vyvrcholily, proto\u017ee \u017eivo\u010di\u0161n\u00e9 tuky byly nahrazeny tov\u00e1rn\u00edmi tuky v\u010detn\u011b rostlinn\u00fdch olej\u016f a margar\u00ednu.<\/p>\n<p class=\"p1\">Obsah cholesterolu v s\u00e1dle je ochranou zdrav\u00ed, nen\u00ed nebezpe\u010dn\u00fd.<\/p>\n<h6 class=\"p1\">\u00a03.
