Prod\u00e1v\u00e1 se u n\u00e1s ji\u017e od dob prvn\u00ed republiky a v obchodech lze naj\u00edt i takov\u00e9, kter\u00e9 se obalem hl\u00e1s\u00ed k historick\u00fdm receptur\u00e1m. Spot\u0159ebitelsk\u00fd \u010dasopis dTest poslal do laborato\u0159e 12 vzork\u016f t\u011bchto m\u011bkk\u00fdch sal\u00e1m\u016f, aby prov\u011b\u0159il jejich kvalitu. V\u00edce ne\u017e polovina propadla v nez\u00e1visl\u00e9m testu kv\u016fli probl\u00e9m\u016fm s mno\u017estv\u00edm nebo kvalitou pou\u017eit\u00e9ho masa. Ve dvou p\u0159\u00edpadech dTest odhalil p\u0159\u00edtomnost separ\u00e1tu, kter\u00fd se v gothaj\u00edch nesm\u00ed pou\u017e\u00edvat.<\/h6>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-123697 alignright\" src=\"http:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2018\/02\/22\/dtest-logo-112x300.jpg\" alt=\"\" width=\"112\" height=\"300\" srcset=\"https:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2018\/02\/22\/dtest-logo-112x300.jpg 112w, https:\/\/zakrasnejsivimperk.cz\/wp-content\/uploads\/2018\/02\/22\/dtest-logo.jpg 119w\" sizes=\"(max-width: 112px) 100vw, 112px\" \/>\u0158ada spot\u0159ebitel\u016f pova\u017euje gothaj za uzeninu n\u00edzk\u00e9 kvality, zat\u00edmco jin\u00ed na n\u011bj nedaj\u00ed dopustit. \u010casopis dTest podrobil testov\u00e1n\u00ed dva kr\u00e1jen\u00e9 gothaje a 10 v\u00fdrobk\u016f balen\u00fdch vcelku. V laborato\u0159i ov\u011b\u0159oval obsah a kvalitu masa, tuku a soli. Podle masn\u00e9 vyhl\u00e1\u0161ky mus\u00ed gothaj obsahovat nejm\u00e9n\u011b 40 % sm\u011bsi vep\u0159ov\u00e9ho a hov\u011bz\u00edho masa a z\u00e1rove\u0148 nesm\u00ed obsahovat separ\u00e1t. Pomoc\u00ed chemick\u00e9 anal\u00fdzy dTest zji\u0161\u0165oval, kolik masa sal\u00e1my obsahovaly a to, zda etikety nezatajuj\u00ed p\u0159\u00edtomnost s\u00f3jov\u00e9 nebo dr\u016fbe\u017e\u00ed b\u00edlkoviny. Nechyb\u011bla ani ochutn\u00e1vka a kontrola \u00fadaj\u016f na obalech.<\/p>\n<p>Anal\u00fdza objevila v\u00fdznamn\u00e9 proh\u0159e\u0161ky.<em> \u201eSedm z 12 testovan\u00fdch gothajsk\u00fdch sal\u00e1m\u016f klame z\u00e1kazn\u00edka. Dva gothajsk\u00e9 sal\u00e1my, konkr\u00e9tn\u011b Bivoj a Zeman, obsahovaly m\u00e9n\u011b masa, ne\u017e slibovaly na obalu. Ve \u010dty\u0159ech dal\u0161\u00edch sal\u00e1mech se na\u0161la dr\u016fbe\u017e\u00ed b\u00edlkovina, ani jeden z nich ji v\u0161ak neuv\u00e1d\u011bl na etiket\u011b. \u0160lo o gothaje zna\u010dek Chodura, Horeca Select z Makra, Maso uzeniny Poli\u010dka a Schneider. Dva sal\u00e1my vyroben\u00e9 na Slovensku obsahovaly zak\u00e1zan\u00fd separ\u00e1t, tedy strojn\u011b odd\u011blen\u00e9 maso. Zjistili jsme to tak, \u017ee jsme v laborato\u0159i nechali zm\u011b\u0159it obsah v\u00e1pn\u00edku a kostn\u00edch \u00falomk\u016f. Jejich vysok\u00fd obsah uk\u00e1zal, \u017ee Mecom Group Gothaj ani Schneider Gothajsk\u00fd sal\u00e1m \u010deskou legislativu nedodr\u017eel,\u201c<\/em> shrnuje v\u00fdsledky testu Hana Hoffmannov\u00e1, \u0161\u00e9fredaktorka \u010dasopisu dTest.<\/p>\n<p>Kvalita masa pou\u017eit\u00e9ho v gothaj\u00edch je rozd\u00edln\u00e1. Mnoh\u00e9 o n\u00ed prozradil obsah \u010dist\u00fdch svalov\u00fdch b\u00edlkovin, ze kter\u00e9ho se pozn\u00e1, kolik je v gothaj\u00edch samotn\u00e9 svaloviny. Vy\u0161\u0161\u00ed obsah \u010dist\u00fdch svalov\u00fdch b\u00edlkovin znamen\u00e1 vy\u0161\u0161\u00ed obsah masa, p\u0159\u00edpadn\u011b jeho vy\u0161\u0161\u00ed libovost \u010di ni\u017e\u0161\u00ed \u0161lachovitost. <em>\u201e\u010cesk\u00e1 vyhl\u00e1\u0161ka se u po\u017eadavk\u016f na kvalitu m\u011bkk\u00fdch sal\u00e1m\u016f spokojila jen s limity pro obsah masa a tuku. Nap\u0159\u00edklad n\u011bmeck\u00e1 legislativa je p\u0159\u00edsn\u011bj\u0161\u00ed a ukl\u00e1d\u00e1 v\u00fdrobc\u016fm m\u011bkk\u00fdch sal\u00e1m\u016f i minim\u00e1ln\u00ed mno\u017estv\u00ed svalov\u00e9 b\u00edlkoviny. Z na\u0161ich vzork\u016f by n\u011bmeck\u00fdm po\u017eadavk\u016fm na nejm\u00e9n\u011b 7,5 % svalov\u00fdch b\u00edlkovin vyhov\u011bly pouze dva m\u011bkk\u00e9 sal\u00e1my \u2013 Horeca Select a Chodura,\u201c<\/em> komentuje Hana Hoffmannov\u00e1.<\/p>\n<p>Obt\u00ed\u017enou discipl\u00ednou bylo pro v\u011bt\u0161inu vzork\u016f i senzorick\u00e9 hodnocen\u00ed, nevedlo se jim nap\u0159\u00edklad ve zkou\u0161ce konzistence. Nejh\u016f\u0159e si vedl 400g gothaj z Poli\u010dky, ale pozn\u00e1mku k nevhodn\u00e9 konzistenci si odnesly bez v\u00fdjimky v\u0161echny vzorky. Nej\u010dast\u011bji hodnotitel\u00e9 vyt\u00fdkali mazlavost a p\u0159\u00edli\u0161nou m\u011bkkost. P\u0159i hodnocen\u00ed chuti ode\u0161lo osm v\u00fdrobk\u016f se \u010dty\u0159kou, mezi nej\u010dast\u011bj\u0161\u00edmi v\u00fdtkami byly \u0161tiplav\u00e1 chu\u0165 a p\u0159\u00edtomnost ne\u017e\u00e1douc\u00edch p\u0159\u00edchut\u00ed.<\/p>\n<p>Pam\u011btn\u00edci s nostalgi\u00ed vzpom\u00ednaj\u00ed na to, \u017ee kdysi gothaj chutnal l\u00e9pe a byl kvalitn\u011bj\u0161\u00ed. <em>\u201eChu\u0165 nedok\u00e1\u017eeme zp\u011btn\u011b posoudit, ale pro porovn\u00e1n\u00ed obsahu se n\u00e1m poda\u0159ilo sehnat st\u00e1tn\u00ed normy pro gothajsk\u00fd sal\u00e1m z let 1961, 1967 a 1978. P\u0159edrevolu\u010dn\u00ed receptury na\u0159izovaly pou\u017eit\u00ed zhruba 65 % sm\u011bsi vep\u0159ov\u00e9ho a hov\u011bz\u00edho masa, ale tehdy se jako maso ozna\u010dovala i surovina tu\u010dn\u011bj\u0161\u00ed a \u0161lachovit\u011bj\u0161\u00ed ne\u017e dne\u0161n\u00ed definovan\u00e9 maso. Proto by 65 % masa v receptu bylo v p\u0159epo\u010dtu z\u0159ejm\u011b m\u00e9n\u011b, ne\u017e dne\u0161n\u00edch 65 % masa uveden\u00fdch na etiket\u011b,\u201c<\/em> vysv\u011btluje Hana Hoffmannov\u00e1. Nav\u00edc ji\u017e na sklonku sedmdes\u00e1t\u00fdch let mohl gothaj obsahovat n\u011bkolik \u00e9\u010dek \u2013 dusitan a polyfosfore\u010dnany. O jejich p\u0159\u00edtomnosti se n\u011bkdej\u0161\u00ed z\u00e1kazn\u00edk ani nemusel dozv\u011bd\u011bt. Na obalu ani p\u0159i prodeji toti\u017e nebylo nutn\u00e9 uv\u00e1d\u011bt slo\u017een\u00ed.<\/p>\n<p>Kontrola jakosti v 60. a 70. letech byla z dne\u0161n\u00edho pohledu pon\u011bkud povrchn\u00ed \u2013 sledoval se pouze obsah tuku, vody, soli, \u0161krobu, dusitan\u016f a senzorick\u00e1 kvalita. Anal\u00fdzy potvrzuj\u00edc\u00ed pou\u017eit\u00ed p\u0159edepsan\u00e9ho mno\u017estv\u00ed masa, p\u0159\u00edtomnost separ\u00e1tu a dr\u016fbe\u017e\u00edch b\u00edlkovin mezi uveden\u00fdmi zkou\u0161kami chyb\u011bly.
