V rodinn\u00fdch ob\u0159adech a oby\u010dej\u00edch prov\u00e1zelo \u010dlov\u011bka od narozen\u00ed a\u017e do smrti \u2013 p\u0159i hostin\u00e1ch, na k\u0159tin\u00e1ch, svatb\u00e1ch, poh\u0159bech, s ko\u0159alkou se zvalo na svatbu, nechyb\u011bla p\u0159i \u017e\u00e1dn\u00e9m setk\u00e1v\u00e1n\u00ed lid\u00ed. Rosoglioerzeugung neboli v\u00fdroba rosolky.<\/p>\n<p>P\u016fvodn\u011b byly rosolky p\u0159ipravov\u00e1ny z rosnatky co\u017e je maso\u017erav\u00e1 slatinn\u00e1 rostlina, podle n\u00ed\u017e lik\u00e9r dostal sv\u00e9 jm\u00e9no. Prvn\u00ed Rosoglio bylo vyrobeno v It\u00e1lii v roce 1332, za hranice se pak dov\u00e1\u017eelo v lahv\u00edch opleten\u00fdch r\u00e1kosem. Tento lik\u00e9r byl pova\u017eov\u00e1n za l\u00e9k na mnoho nemoc\u00ed. Dokonce i dnes je doporu\u010dov\u00e1n jako homeopatick\u00fd l\u00e9k na \u010dern\u00fd ka\u0161el. Tak o tom ostatn\u011b p\u00ed\u0161e ve sv\u00e9m Herb\u00e1\u0159i anglick\u00fd botanik 17. stolet\u00ed Nicholas Culperer.<\/p>\n<p>V 17. stolet\u00ed se rosoglio vyr\u00e1b\u011blo tak\u00e9 ve Francii a bylo velmi obl\u00edben\u00e9. Prvn\u00ed, kdo za\u010dal rosoglio vyr\u00e1b\u011bt u n\u00e1s, byl fabrikant Franz Heinz z Horn\u00edho Bene\u0161ova roku 1783. Cena jedn\u00e9 l\u00e1hve rosolky se pohybovala mezi 36 krejcary a\u017e 1 zlat\u00fdm a 36 krejcary. V\u00fdrobci pro nedostatek rosnatky importuj\u00ed surovinu z Madagaskaru. Chutn\u00e1 ho\u0159koslan\u011b s n\u00e1dechem bylin a zeminy, a m\u00e1 sp\u00ed\u0161e pr\u016fhlednou sv\u011btlou br\u010d\u00e1lovou barvu a milenka na prvn\u00ed pohled ani ochutn\u00e1n\u00ed to zrovna nen\u00ed.<\/p>\n<p>Pozd\u011bji, jak uv\u00e1d\u00ed Ott\u016fv slovn\u00edk nau\u010dn\u00fd, za\u010dalo se pou\u017e\u00edvat r\u016f\u017eov\u00fdch okv\u011btn\u00edch pl\u00e1tk\u016f. Mo\u017en\u00e1 v\u00e1s te\u010f napadne, \u017ee jde zase o n\u011bjak\u00fd v\u00fdmysl modern\u00ed doby. Snahu \u0161okovat n\u011b\u010d\u00edm nov\u00fdm, netradi\u010dn\u00edm. Jen\u017ee kv\u011bty r\u016f\u017e\u00ed v kuchyni zpracov\u00e1valy u\u017e na\u0161e prababi\u010dky a babi\u010dky. Ur\u010dit\u011b jste n\u011bkdy, t\u0159eba ve filmu pro pam\u011btn\u00edky, zaslechli slovo rosolka. Jak jeho z\u00e1klad napov\u00edd\u00e1, nejde o nic jin\u00e9ho, ne\u017e o vo\u0148av\u00fd r\u016f\u017eov\u00fd lik\u00e9r, kter\u00fd na\u0161i p\u0159edkov\u00e9 s oblibou pop\u00edjeli. Lihoviny, vyroben\u00e9 nejr\u016fzn\u011bj\u0161\u00edmi metodami, od jednoduch\u00e9 p\u0159\u00edpravy z trest\u00ed a\u017e po destilaci, obsahuj\u00edc\u00ed v\u0161ak v ka\u017ed\u00e9m p\u0159\u00edpad\u011b cukr. M\u00edrn\u011b sladk\u00e9 lihoviny b\u00fdvaj\u00ed naz\u00fdv\u00e1ny rosolkami, slad\u0161\u00ed lik\u00e9ry, siln\u011b sladk\u00e9 a hust\u00e9 kr\u00e9my.<\/p>\n<p>Rosolky se ji\u017e v roce 1790 vyr\u00e1b\u011bly s r\u016fzn\u00fdmi p\u0159\u00edchut\u011bmi (an\u00fdzov\u00e1, km\u00ednka, fenyklov\u00e1, co p\u0159\u00edroda dala&#8230;..). Jejich z\u00e1kladem byl l\u00edh. A\u017e do konce 18. stolet\u00ed existoval alkoholick\u00fd n\u00e1poj jen pro \u017eeny, rosolka a ta m\u011bla kolem 8% alkoholu. A jeden star\u00fd recept (jeden z mo\u017en\u00fdch). Hrst r\u016f\u017eov\u00fdch kv\u011btn\u00edch pl\u00e1tk\u016f (r\u016f\u017ee \u0161\u00edpkov\u00e1 nebo svraskl\u00e1), 5 h\u0159eb\u00ed\u010dk\u016f, kousek cel\u00e9 sko\u0159ice, na \u0161pi\u010dku no\u017ee mlet\u00e9ho z\u00e1zvoru, \u010dtvrt mu\u0161k\u00e1tov\u00e9ho o\u0159echu, 250 g krystalov\u00e9ho cukru, 200 g medu, 0,5 litru lihu (80 %), 0,5 litru vody. V\u0161echny p\u0159\u00edsady krom\u011b cukru a lihu va\u0159\u00edme asi 20 minut. P\u0159id\u00e1me cukr, rozva\u0159\u00edme, je\u0161t\u011b v\u0159el\u00e9 p\u0159eced\u00edme p\u0159es pl\u00e1tno. P\u0159id\u00e1me med a dob\u0159e rozm\u00edch\u00e1me. Nech\u00e1me dokonale vychladnout a p\u0159ilijeme l\u00edh. P\u0159elijeme do dob\u0159e uzav\u00edrateln\u00e9 n\u00e1doby, nech\u00e1me asi t\u00fdden ust\u00e1t. Pak p\u0159elijeme do lahv\u00ed, zaz\u00e1tkujeme a nech\u00e1me je\u0161t\u011b dal\u0161\u00ed \u010dty\u0159i t\u00fddny odpo\u010d\u00edvat.<\/p>\n<p><strong>Zdroj: F.
