P\u0159i\u0161li pr\u00e1v\u011b, kdy\u017e tito si va\u0159ili ob\u011bd. Visel \u010dern\u00fd kotel nad ohn\u011bm, v kotlu voda v\u0159ela, nasypali \u010dern\u00e9, \u017eitn\u00e9 mouky a trochu soli, zava\u0159ili mouku do jist\u00e9 hou\u0161\u0165ky, ustavi\u010dn\u011b d\u0159ev\u011bnou m\u011bcha\u010dkou m\u00edchaj\u00edce, pak vodu slili a zb\u00fdvaj\u00edc\u00ed v kotlu hustou ka\u0161i siln\u011b omastili. \u0160terc byl hotov, jedli jej z kotlu, p\u0159ij\u00eddaj\u00edce z velk\u00e9ho kraj\u00e1\u010de sedl\u00e9ho ml\u00e9ka. P\u0159\u00edru\u010d\u00ed okusil, i chutnalo mu dob\u0159e, ale zd\u00e1l se mu \u0161terc p\u0159esp\u0159\u00edli\u0161 mastn\u00fdm. \u0158ekl jim to, oni pak odv\u011btili, \u017ee jinak b\u00fdti nem\u016f\u017ee, bez omastku \u017ee by se nenasytili a t\u011b\u017ek\u00e9, nam\u00e1hav\u00e9 pr\u00e1ce sv\u00e9 konati nemohli.\u201c..<\/em> <strong>Karel Klostermann \/ Ze sv\u011bta lesn\u00edch samot<\/strong><\/p>\n<p>M\u00e1lokde plat\u00ed p\u0159esn\u011bji fakt, \u017ee j\u00eddlo je obrazem kraje, jako tady. Je odrazem jeho p\u0159\u00edrodn\u00edch podm\u00ednek, dovednost\u00ed, tradic, vliv\u016f a v neposledn\u00ed \u0159ad\u011b tak\u00e9 historie. Beheimewalt ve 12. stolet\u00ed, B\u00f6hmerwald \u010dili \u010cesk\u00fd les v dob\u011b nov\u011bj\u0161\u00ed &#8211; tak bylo zem\u011bpisn\u011b ozna\u010dov\u00e1no \u00fazem\u00ed le\u017e\u00edc\u00ed na hranici s Bavorskem. N\u011bkdy bylo ozna\u010dov\u00e1no tak\u00e9 jako silva media &#8211; st\u0159ed pomezn\u00edho pralesa.<\/p>\n<p>T\u011bsn\u00e1 bl\u00edzkost Bavorska d\u00e1v\u00e1 podobu tak\u00e9 zdej\u0161\u00edmu jazyku, jeho\u017e dvojjazy\u010dnost v\u017edy pom\u00e1hala zdej\u0161\u00edm \u0159emesln\u00edk\u016fm k z\u00edsk\u00e1v\u00e1n\u00ed pr\u00e1ce za hranicemi \u00fazem\u00ed a st\u00e1tu, ale tak\u00e9 k p\u0159ij\u00edm\u00e1n\u00ed nov\u00fdch poznatk\u016f gastronomick\u00fdch. Ty pak obohacovaly zdej\u0161\u00ed p\u016fvodn\u00ed, tradi\u010dn\u00ed kuchyni. Ta star\u00e1, tradi\u010dn\u00ed kuchyn\u011b, byla velmi prost\u00e1. Brambory, zel\u00ed, ml\u00e9ko a ob\u010das vep\u0159ov\u00e9 maso. Zv\u011b\u0159ina byla do poloviny 20. stolet\u00ed jen na stole vrchnosti, m\u011b\u0161\u0165anstva, tak\u00e9 hajn\u00fdch a pytl\u00e1k\u016f.<\/p>\n<p>Brambory se sice objevuj\u00ed v \u010desk\u00fdch zem\u00edch ve v\u011bt\u0161\u00ed m\u00ed\u0159e a\u017e v 18. stolet\u00ed, ale od t\u00e9 doby zauj\u00edmaj\u00ed v \u0161umavsk\u00e9 kuchyni v\u00fdznamn\u00e9 m\u00edsto a byly spole\u010dn\u011b s chlebem hlavn\u00edm j\u00eddlem. Z\u00e1kladn\u00edm zdrojem stravy obyvatel \u0160umavy bylo to, co si lid\u00e9 sami vyp\u011bstovali a co jim byl schopen poskytnout jejich dobytek. Zejm\u00e9na ve vy\u0161\u0161\u00edch poloh\u00e1ch neposkytovala m\u00e1lo \u00farodn\u00e1 pol\u00ed\u010dka dostate\u010dn\u00e9 mno\u017estv\u00ed plodin pro ob\u017eivu, a tak museli lid\u00e9 pot\u0159ebn\u00e9 mno\u017estv\u00ed surovin dokupovat a dov\u00e1\u017eet.<\/p>\n<p>Vedle leg\u00e1ln\u00edho obchodu s potravinami existoval i obchod ileg\u00e1ln\u00ed, tedy pa\u0161ov\u00e1n\u00ed zbo\u017e\u00ed p\u0159es hranice. V rodn\u00e9m list\u011b m\u00e1 \u0160umava zapsan\u00fd \u0161terc nebo \u0161mornu (sladk\u00e9 j\u00eddlo z ml\u00e9ka, krupice a vajec). Zvl\u00e1\u0161\u0165 dob\u0159e chutn\u00e1 v chladn\u00e9m po\u010das\u00ed na podzim a v zim\u011b s podm\u00e1sl\u00edm. \u0160terc je historick\u00e9 \u0161umavsk\u00e9 j\u00eddlo, kter\u00e9 se va\u0159ilo na \u0160umav\u011b hlavn\u011b v zim\u011b, kdy byly chalupy od\u0159\u00edznut\u00e9 od sv\u011bta a ve sklep\u011b pomalu nebylo nic jin\u00e9ho ne\u017e soudek se kysel\u00fdm zel\u00edm, kysel\u00fdm ml\u00e9kem, kam se ka\u017ed\u00fd den p\u0159il\u00e9valy zbytky ml\u00e9ka \u010derstv\u00e9ho, a brambory.<\/p>\n<p>Bramborov\u00fd \u0161terc zasytil lidi ze \u0160umavy p\u0159ed tvrdou prac\u00ed t\u0159eba v les\u00edch t\u00e9m\u011b\u0159 na cel\u00fd den. A dod\u00e1me p\u0159esn\u00fd recept. Ve slupce uva\u0159en\u00e9 oloupan\u00e9 brambory nech\u00e1me vychladnout a nastrouh\u00e1me na polohrubo a ve v\u011bt\u0161\u00ed m\u00edse je opatrn\u011b prom\u00edch\u00e1me s hrubou moukou tak, aby se jednotliv\u00e9 kousky zcela obalili. Pot\u00e9 op\u00e9k\u00e1me na tro\u0161e s\u00e1dla na p\u00e1nvi s nep\u0159ilnav\u00fdm povrchem za neust\u00e1l\u00e9ho m\u00edch\u00e1n\u00ed dozlatova. M\u016f\u017eeme pou\u017e\u00edt i olej, ale tradi\u010dn\u00ed a chutn\u011bj\u0161\u00ed je s\u00e1dlo.
