Co d\u011bl\u00e1me jinak ne\u017e na\u0161i p\u0159edci, kte\u0159\u00ed si v\u00e1no\u010dn\u00ed sv\u00e1tky u\u017e\u00edvali v klidu a pokoji, zat\u00edmco my v posledn\u00edch letech \u010dasto sl\u00fdch\u00e1me, jak se vlastn\u011b lid\u00e9 na V\u00e1noce ani net\u011b\u0161\u00ed a \u201eu\u017e aby ty sv\u00e1tky byly za n\u00e1mi\u201c?<\/h6>\n<p>\u0160t\u011bdr\u00fd den byl d\u0159\u00edve v \u010desk\u00fdch zem\u00edch dnem postn\u00edm. P\u0159es den se v\u016fbec nejedlo nebo se pod\u00e1val jen ob\u011bd postn\u00edho charakteru (dle zvyk\u016f kraje \u010di rodiny hubn\u00edk, kuba, muzika \u2013 ovocn\u00fd kompot nebo n\u011bjak\u00e1 \u0159\u00eddk\u00e1 pol\u00e9vka). Hlavn\u00edm pokrmem pod\u00e1van\u00fdm b\u011bhem dne byla zejm\u00e9na v\u00e1no\u010dka nebo \u0161tola.<\/p>\n<p>Ji\u017e od \u010dasn\u00e9ho r\u00e1na p\u0159ipravovaly hospodyn\u011b \u0161t\u011bdrove\u010dern\u00ed pokrmy. Va\u0159ily \u010do\u010dku a ryb\u00ed nebo hrachovou pol\u00e9vku, pekly kubu z krup a \u010desneku. Sou\u010d\u00e1st\u00ed p\u0159\u00edprav bylo i pe\u010den\u00ed speci\u00e1ln\u00edho chleba a samoz\u0159ejm\u011b tradi\u010dn\u00ed v\u00e1no\u010dky. P\u0159i v\u0161ech p\u0159\u00edprav\u00e1ch se neuj\u00eddalo, proto\u017ee ten, kdo vydr\u017eel a\u017e do ve\u010de\u0159e nej\u00edst, m\u011bl \u0161anci uvid\u011bt zlat\u00e9 pras\u00e1tko.<\/p>\n<h6>\u0160t\u011bdrove\u010dern\u00ed slavnostn\u00ed st\u016fl<\/h6>\n<p>Vrcholem cel\u00e9ho dne byla slavnostn\u00ed ve\u010de\u0159e, kdy se ka\u017ed\u00fd najedl do sytosti. D\u016fle\u017eitost \u0161t\u011bdrove\u010dern\u00ed hostiny se v lidov\u00e9m prost\u0159ed\u00ed vyjad\u0159ovala zejm\u00e9na pestrou skladbou pokrm\u016f, kter\u00fdm se p\u0159ipisoval symbolick\u00fd v\u00fdznam. Ke stolu se v\u0161ak mohlo usednout a\u017e tehdy, kdy\u017e vysvitla prvn\u00ed hv\u011bzda na obloze. V\u00fdzdob\u011b \u0161t\u011bdrove\u010dern\u00edho stolu se v\u011bnovala velk\u00e1 pozornost. Na jednom rohu le\u017eel pecen chleba, aby m\u011bla rodina co j\u00edst i b\u011bhem roku. Na druh\u00e9m slam\u011bnka s t\u00edm, co pole dalo, pro lep\u0161\u00ed \u00farodu, a na t\u0159et\u00ed roh se pokl\u00e1daly pen\u00edze slibuj\u00edc\u00ed blahobyt. Na posledn\u00edm \u010dtvrt\u00e9m rohu le\u017eela miska na zbyl\u00e9 kousky j\u00eddla jako dar pro dobytek a slepice. St\u016fl obep\u00ednal \u0159et\u011bz nebo provaz symbolizuj\u00edc\u00ed soudr\u017enost rodiny. Od stolu se sm\u011blo odej\u00edt a\u017e v moment\u011b, kdy v\u0161ichni dojedli. Zbytky ve\u010de\u0159e se rozd\u011blily mezi dobytek, ovocn\u00e9 stromy, aby dob\u0159e rodily a studni, aby m\u011bla \u010distou vodu.<\/p>\n<h6>J\u00eddlo slavnostn\u00ed, ale zdrav\u00e9<\/h6>\n<p>\u0160t\u011bdrove\u010dern\u00ed menu na\u0161ich p\u0159edk\u016f bylo sice prost\u0161\u00ed, ale rozhodn\u011b zdrav\u011bj\u0161\u00ed ne\u017e na\u0161e dne\u0161n\u00ed zvyklosti. I kdy\u017e se \u0161t\u011bdrove\u010dern\u00ed hodov\u00e1n\u00ed m\u00edsto od m\u00edsta li\u0161ilo, v\u0161ude byla jedna v\u011bc spole\u010dn\u00e1 &#8211; nejedlo se maso. Na \u0161t\u011bdrove\u010dern\u00edm stole v\u0161ak bylo v\u0161e, co se urodilo. Pokrmy byly p\u0159ipravov\u00e1ny z b\u011b\u017en\u00fdch z\u00e1sob, tedy p\u0159edev\u0161\u00edm lu\u0161t\u011bnin, brambor a obilnin. Slavnostn\u00ed menu se skl\u00e1dalo a\u017e z dev\u00edti chod\u016f a ochutnat se podle tradice m\u011blo ze v\u0161ech plodin, kter\u00e9 uplynul\u00fd rok p\u0159inesl. \u0160t\u011bdrove\u010dern\u00ed pokrmy se samoz\u0159ejm\u011b li\u0161ily podle kraj\u016f a tak\u00e9 movitosti rodin. V n\u011bkter\u00fdch dom\u00e1cnostech p\u0159i\u0161el jako prvn\u00ed na \u0161t\u011bdrove\u010dern\u00ed st\u016fl hr\u00e1ch, teprve pot\u00e9 pol\u00e9vka, je\u017e m\u011bla dodat s\u00edlu, a \u010do\u010dka, kter\u00e1 m\u011bla p\u0159in\u00e9st rodin\u011b v nov\u00e9m roce pen\u00edze.<\/p>\n<h6>Co se vlastn\u011b d\u0159\u00edve jedlo?<\/h6>\n<p>N\u011bkolik dn\u016f p\u0159ed V\u00e1nocemi se napekl chl\u00e9b a v\u00e1no\u010dky z b\u00edl\u00e9 mouky, hrozinek a mandl\u00ed. \u0160t\u011bdrove\u010dern\u00ed ve\u010de\u0159e se p\u0159ipravovala od r\u00e1na a skl\u00e1dala se z n\u011bkolika chod\u016f: hrachov\u00e1 nebo \u010do\u010dkov\u00e1 pol\u00e9vka, kuba, (kroupy s houbami a \u010desnekem), pukance s m\u00e1kem a medem, hubn\u00edk (n\u00e1kyp s houbami). Ryba na stole v\u011bt\u0161inou chyb\u011bla, proto\u017ee v 16. a 17. stolet\u00ed pat\u0159ila mezi postn\u00ed j\u00eddla. Kapr se stal tradi\u010dn\u00edm v\u00e1no\u010dn\u00edm j\u00eddlem teprve v 19. stolet\u00ed. Z\u00e1rukou hojnosti v p\u0159\u00ed\u0161t\u00edm roce byl velk\u00fd dostatek j\u00eddla na \u0161t\u011bdrove\u010dern\u00ed tabuli.<\/p>\n<p>Nikde ur\u010dit\u011b nechyb\u011bl zape\u010den\u00fd \u010dern\u00fd kuba z hub a krupek a s trochou \u010desneku, va\u0159en\u00e9 a su\u0161en\u00e9 ovoce, \u010do\u010dka nebo hr\u00e1ch. Podle tradice konzumov\u00e1n\u00ed lu\u0161t\u011bnin m\u011blo zabezpe\u010dit zveleben\u00ed rodinn\u00e9ho majetku. \u010cern\u00fd kuba tvo\u0159il hlavn\u00ed pokrm \u0161t\u011bdrove\u010dern\u00ed tabule. P\u0159\u00edvlastek \u010dern\u00fd odr\u00e1\u017e\u00ed tmavou barvu pokrmu, kterou mu dala houba stro\u010dek trubkovit\u00fd. Dnes se t\u00e9m\u011b\u0159 nepou\u017e\u00edv\u00e1, ale i h\u0159\u00edbky tohle j\u00eddlo hezky zabarv\u00ed. Z\u00e1kladem pokrmu jsou zape\u010den\u00e9 kroupy s houbami a se s\u00e1dlem. Na \u0160t\u011bdr\u00fd den se v\u0161ak nesm\u011bl j\u00edst samotn\u00fd \u010desnek, aby po n\u011bm lid\u00e9 nebyli zl\u00ed, naopak se m\u011bl d\u00e1t kohoutovi, aby se nedal. Vzpome\u0148te na ver\u0161e uveden\u00e9 v\u00fd\u0161e.<\/p>\n<h6>Jak je to vlastn\u011b s kaprem a bramborov\u00fdm sal\u00e1tem?<\/h6>\n<p>Tradice sma\u017een\u00e9ho kapra s bramborov\u00fdm sal\u00e1tem se v majetn\u011bj\u0161\u00edch rodin\u00e1ch rozm\u00e1h\u00e1 a\u017e na po\u010d\u00e1tku p\u0159edminul\u00e9ho stolet\u00ed a p\u0159i\u0161la k n\u00e1m z V\u00eddn\u011b. B\u011b\u017en\u00fdm \u0161t\u011bdrove\u010dern\u00edm j\u00eddlem se kapr stal teprve ve 2. polovin\u011b 19. stolet\u00ed, kdy jej cenov\u00e1 regulace u\u010dinila dostupn\u00fdm pro \u0161irok\u00e9 vrstvy obyvatelstva. Dnes se ponejv\u00edce p\u0159ipravuje sma\u017een\u00fd kapr, ale v d\u0159\u00edv\u011bj\u0161\u00edch dob\u00e1ch se nej\u010dast\u011bji pod\u00e1val kapr na\u010derno.<\/p>\n<p>Tradi\u010dn\u00ed zp\u016fsob p\u0159\u00edpravy \u2013 nejstar\u0161\u00ed dochovan\u00fd recept je z roku 1810 \u2013 trval t\u0159i dny. Kapr se pekl v om\u00e1\u010dce z du\u0161en\u00e9 cibule, ko\u0159enov\u00e9 zeleniny, mandl\u00ed, rozinek, povidel a sladk\u00e9ho piva se su\u0161en\u00fdmi \u0161vestkami, o\u0159echy a strouhan\u00fdm pern\u00edkem. Pod\u00e1val se s v\u00e1no\u010dkou \u010di \u0161i\u0161kami, pozd\u011bji s knedl\u00edky. Tento recept v\u0161ak postupn\u011b kv\u016fli sv\u00e9 slo\u017eit\u00e9 p\u0159\u00edprav\u011b z j\u00eddeln\u00ed\u010dku zmizel a do \u010desk\u00e9 kuchyn\u011b p\u0159i\u0161el z Rakouska zmi\u0148ovan\u00fd kapr sma\u017een\u00fd.<\/p>\n<p>\u017did\u00e9 zase p\u0159ipravovali marinovanou rybu, tedy kapra v rosolu s ko\u0159enovou zeleninou, divok\u00fdm ko\u0159en\u00edm a cibul\u00ed.<\/p>\n<p>Ke kapru se jako p\u0159\u00edloha pod\u00e1v\u00e1 bramborov\u00fd sal\u00e1t, ale ani ten nem\u00e1 v \u010desk\u00e9 kuchyni dlouhou tradici. Rodinn\u00e9 recepty na sal\u00e1t jsou velmi rozmanit\u00e9; z\u00e1klad tvo\u0159\u00ed brambory, petr\u017eel, celer, mrkev, hr\u00e1\u0161ek, cibule a kysel\u00e9 okurky, to v\u0161e spojen\u00e9 majon\u00e9zou, av\u0161ak mohou se do n\u011bj p\u0159id\u00e1vat t\u00e9\u017e nap\u0159. vejce, sal\u00e1m, \u0161unka \u010di s\u00fdr. V p\u0159edv\u00e1le\u010dn\u00fdch kucha\u0159k\u00e1ch nenajdeme na bramborov\u00fd sal\u00e1t recept, odborn\u00edci se domn\u00edvaj\u00ed, \u017ee se v \u010desk\u00e9 kuchyni objevuje a\u017e n\u011bkdy b\u011bhem 2. sv\u011btov\u00e9 v\u00e1lky a \u017ee jeho p\u016fvod tkv\u00ed z\u0159ejm\u011b v rusk\u00e9 kuchyni.<\/p>\n<h6>O V\u00e1noc\u00edch si oslad\u00edme \u017eivot<\/h6>\n<p>V \u017e\u00e1dn\u00e9 dom\u00e1cnosti nesm\u011bla chyb\u011bt v\u00e1no\u010dka (\u0161t\u011bdrovka), kterou jako prvn\u00ed dost\u00e1val hospod\u00e1\u0159, aby se mu urodilo hojn\u011b obil\u00ed. V\u00e1no\u010dka \u010di chl\u00e9b byly po cel\u00fd v\u00e1no\u010dn\u00ed \u010das na stole, bu\u010f pro zabezpe\u010den\u00ed \u00farody, nebo aby byla hojnost zrna po cel\u00fd rok. Kousek v\u00e1no\u010dky dostal tak\u00e9 dobytek i slepice, aby hodn\u011b nesly. Pe\u010den\u00ed v\u00e1no\u010dn\u00edho cukrov\u00ed je jednou z nejroz\u0161\u00ed\u0159en\u011bj\u0161\u00edch v\u00e1no\u010dn\u00edch tradic v \u010desk\u00fdch dom\u00e1cnostech. Za\u010d\u00edn\u00e1 se ji\u017e v adventn\u00edm \u010dase, aby cukrov\u00ed do V\u00e1noc zk\u0159ehlo. Mezi nejobl\u00edben\u011bj\u0161\u00ed v\u017edy pat\u0159ily sladk\u00e9 a vo\u0148av\u00e9 vanilkov\u00e9 rohl\u00ed\u010dky, o\u0159echov\u00e1 vos\u00ed hn\u00edzda, lineck\u00e9 cukrov\u00ed slepovan\u00e9 marmel\u00e1dou \u010di proslul\u00e9 \u010desk\u00e9 v\u00e1no\u010dn\u00ed pern\u00ed\u010dky. Mezi \u0161t\u011bdrove\u010dern\u00ed sladk\u00e9 pokrmy m\u016f\u017eeme za\u0159adit i z\u00e1vin (\u0161tr\u00fadl), kter\u00fd je uv\u00e1d\u011bn a\u017e v 19. stolet\u00ed. Cukrov\u00ed se konzumuje po celou dobu V\u00e1noc.<\/p>\n<h6>Bez muziky to ne\u0161lo<\/h6>\n<p>Na \u0161t\u011bdrove\u010dern\u00edm stole nesm\u011bla chyb\u011bt muzika. Jednalo se o obl\u00edben\u00fd a i pro chud\u0161\u00ed lidi dostupn\u00fd v\u00e1no\u010dn\u00ed kompot \u2013 jablka a hru\u0161ky, p\u0159\u00edpadn\u011b i \u0161vestky se pova\u0159ily se sko\u0159ic\u00ed a h\u0159eb\u00ed\u010dkem ve vod\u011b oslazen\u00e9 vanilkov\u00fdm cukrem. Kdy\u017e ovoce zm\u011bklo, vyskl\u00e1dalo se na m\u00edsu, ozdobilo su\u0161en\u00fdmi \u0161vestkami, zalilo sladkou \u0161\u0165\u00e1vou a dalo se vychladit. N\u011bkde p\u0159id\u00e1vali mandle, rozinky nebo i pern\u00edk. Podle pov\u011bry sm\u011bs va\u0159en\u00e9ho su\u0161en\u00e9ho ovoce zaru\u010dovala v rodin\u011b svornost. Je\u0161t\u011b v 19. stolet\u00ed se v mnoh\u00fdch dom\u00e1cnostech pova\u017eovalo za cukrov\u00ed pr\u00e1v\u011b sva\u0159en\u00e9 slazen\u00e9 ovoce. Formovalo se do podoby hra\u010dek pro d\u011bti (nap\u0159. \u010dert zhotoven\u00fd ze \u0161vestek a \u0161pejl\u00ed). Z\u00e1kladem dal\u0161\u00ed chutn\u00e9 hra\u010dky byly vrko\u010de v\u011bncovit\u00e9ho pleten\u00e9ho kola z kynut\u00e9ho t\u011bsta se zabodnut\u00fdmi \u0161pejlemi s navl\u00e9knut\u00fdmi k\u0159\u00ed\u017ealami.<\/p>\n<p>Dodnes se na n\u011bkter\u00fdch m\u00edstech p\u0159ipravuj\u00ed \u0161i\u0161ky, pe\u010den\u00e9 z kynut\u00e9ho t\u011bsta, sypan\u00e9 m\u00e1kem, pracharandou z hru\u0161ek a p\u0159elit\u00e9 sladk\u00fdm hork\u00fdm ml\u00e9kem. Nakonec hostiny se pod\u00e1vala v\u00e1no\u010dka, o\u0159echy a ovoce, zvl\u00e1\u0161t\u011b jablka. Co se t\u00fdk\u00e1 pe\u010diva, kter\u00e9mu dnes \u0159\u00edk\u00e1me \u010dajov\u00e9, pekly se b\u011bhem adventu su\u0161enky s r\u016fzn\u00fdm ko\u0159en\u00edm, nap\u0159\u00edklad se z\u00e1zvorem, an\u00fdzem, fenyklem, a tak\u00e9 r\u016fzn\u00e9 pern\u00ed\u010dky.<\/p>\n<h6>Tak\u00e9 na maso v\u0161ak do\u0161lo<\/h6>\n<p>Dal\u0161\u00ed v\u00e1no\u010dn\u00ed dny, tedy prvn\u00ed sv\u00e1tek v\u00e1no\u010dn\u00ed a den sv. \u0160t\u011bp\u00e1na (25. a 26. prosince), u\u017e nemaj\u00ed tak ob\u0159adn\u00ed charakter jako \u0160t\u011bdr\u00fd den. Skladbu a v\u00fdb\u011br j\u00eddel pro tyto dny ovliv\u0148uj\u00ed zejm\u00e9na krajov\u00e9 a rodinn\u00e9 zvyklosti. Na den sv. \u0160t\u011bp\u00e1na se obvykle pod\u00e1v\u00e1 pe\u010den\u00fd krocan, husa anebo kachna, p\u0159\u00edpadn\u011b pokrmy z jin\u00fdch druh\u016f masa.<\/p>\n<h6>V\u00e1noce a zimn\u00ed slunovrat<\/h6>\n<p>V p\u0159edk\u0159es\u0165ansk\u00e9 dob\u011b se V\u00e1noce slavily jako oslava zimn\u00edho slunovratu. Slunce bylo uct\u00edv\u00e1no jako zdroj \u017eivotod\u00e1rn\u00e9 s\u00edly. S oslavou slunovratu bylo spjato ob\u011btov\u00e1n\u00ed a pou\u017e\u00edv\u00e1n\u00ed ur\u010dit\u00fdch plodin a z nich p\u0159ipravovan\u00fdch pokrm\u016f. N\u011bkter\u00e9 plodiny se kladly na v\u00e1no\u010dn\u00ed st\u016fl nebo se z nich p\u0159ipravovaly r\u016fzn\u00e9 pokrmy, co\u017e m\u011blo zabezpe\u010dit hojnou \u00farodu, plodnost a zdrav\u00ed nejen pro lidi, ale i pro dobytek. Zastoupeny byly p\u0159edev\u0161\u00edm tyto plodiny: obil\u00ed, lu\u0161t\u011bniny, m\u00e1k, \u0161\u00edpek, houby a zvl\u00e1\u0161tn\u00ed \u00falohu m\u011bl med a \u010desnek.<\/p>\n<p>Oslava slunovratu dod\u00e1vala pe\u010divu i tvar symbolizuj\u00edc\u00ed slunce (kulat\u00e9 chleby, placky, kol\u00e1\u010de) . Jin\u00e9 tvary pe\u010diva zase pravd\u011bpodobn\u011b zobrazovaly n\u011bkdej\u0161\u00ed ob\u011btn\u00ed zv\u00ed\u0159ata anebo symbolizovaly plodnost (kohouti, husy, kravi\u010dky), a op\u011bt patrn\u011b i slunovrat (pt\u00e1\u010dci, je\u0161t\u011brky, \u017eeb\u0159\u00edk, kl\u00ed\u010d).<\/p>\n<h6>Prom\u011bna v\u00e1no\u010dn\u00edho stromku<\/h6>\n<p>Ke \u0160t\u011bdr\u00e9mu ve\u010deru pat\u0159\u00ed tak\u00e9 ozdoben\u00fd strome\u010dek. B\u011b\u017en\u00fdmi ozdobami krom\u011b \u010derven\u00fdch ma\u0161li\u010dek bylo hlavn\u011b su\u0161en\u00e9 ovoce, d\u00e1le pak o\u0159echy a pern\u00ed\u010dky. V\u011bt\u0161ina pamlsk\u016f, kter\u00e9 je\u0161t\u011b v 19. stolet\u00ed zdobily v\u00e1no\u010dn\u00ed stromek a stole\u010dek na\u0161ich prababi\u010dek a prad\u011bde\u010dk\u016f, v\u0161ak po dvou sv\u011btov\u00fdch v\u00e1lk\u00e1ch upadla v zapomn\u011bn\u00ed. Obdob\u00ed blahobytu vym\u011bnilo lidov\u00e9 pochoutky z finan\u010dn\u011b nen\u00e1ro\u010dn\u00fdch surovin za mnohem n\u00e1kladn\u011bj\u0161\u00ed a pracn\u011bj\u0161\u00ed v\u00e1no\u010dn\u00ed cukrov\u00ed.<\/p>\n<p>Jakmile se v 19. stolet\u00ed stal ozdoben\u00fd stromek sou\u010d\u00e1st\u00ed V\u00e1noc, kupovalo se u cukr\u00e1\u0159\u016f sn\u011bhov\u00e9 cukrov\u00ed, kter\u00e9 se navl\u00e9kalo na nit\u011b a v\u011b\u0161elo na stromek vedle pern\u00ed\u010dk\u016f a ovoce. Brzy se na v\u00e1no\u010dn\u00edm stromku objevilo dal\u0161\u00ed cukrov\u00ed z fond\u00e1nov\u00e9 hmoty, d\u00e1le figurky z tmav\u00e9ho, b\u00edl\u00e9ho a sv\u011btl\u00e9ho nug\u00e1tu a nakonec figurky \u010dokol\u00e1dov\u00e9.
